I made it today and turned out exactly like yours. I used a 9×4 pullman pan without the lid, produced a very tall beautiful loaf. My only mistake was not baking it long enough. I baked it for 30 minutes, and it sounded hollow when I tapped it but it needed another 5 minutes or so. Also, the dough was vercky sticky, but after the first rise I added a tablespoon of flour on top to shape it. Thanks, your recipes are great!

8 – 110 minutes to knead in a stand mixer seems a long time. Is it 8-10 Mins. Thank you.

    1. Ah! yes, Carol, it is 8 to 10 minutes. I’m surprised no one bought it up. Guess people realized it was a type error. Thanks for bringing it to my attention – Just fixed it.

  3. Made this bread today, and it turned out great. I use the 9 inch loaf pan – perfect for sandwiches. Thanks

  4. I believe there is a typo in step 6. it says 8 inch pan but the beginning measurement is for a 9inch loaf pan

I am a beginner baker. I have made several different basic breads and got varying results. I made this bread and was pleasantly surprised. I used the loaf pan I had on hand, need one slightly deeper. The dough achieved a good to very good rise. The crumb was moderately open and very soft. The crust was on the darker side, which I like, and brought superb flavor. With consistent results, I will have found my new daily Bread. I so wish I could post the pictures.

I have made this twice and both times it rises way too much while baking so I have super tall loaf. I have tried not letting it rise above the edge of the loaf pan for my second attempt but still the same outcome.

    1. Hey Jena. make sure to use the right recipe ingredients for the final dough in relation to the pan you have.
I have given guidelines for pan sizes and final dough – these are industry-standard set total dough weights that are used for the size of the loaf pans.
