  2. came out awful and followed the directions exactly. the reviews are all fake too, the rating was really misleading. not using this site again.

    1. Sorry to hear that Mordi. I make this bread almost every other week and often use this dough to make different variations of bread. So, the dough has been tested and tried a few times.
      It is a forgiving dough with 65% hydration, not too dense and soft to work with.
      The ingredients list is a little long, but that only makes for a wholesome and delicious bread.
      I don’t know what the issue was, but if you need, I’d be happy to troubleshoot.

    I have a question about the autolysing. You say to add 250g of milk to 695g mix of flour. That’s a hydration of 35% and cannot be right. I tried it and it was not enough to hydrate the flour. From reading it should be around 65% hydration for wholemeal flour.

    1. Daiden, Yes, it is very little moisture but that’s because we autolyze with only the hot milk, not the yeast mixture.
      The hot milk softens the gluten first then we add the yeast when that mixture cools down.
      If we add the yeast mixture to the hot milk it will kill the yeast.
      The total amount of liquid once added will complete the dough.
      Hope that makes sense.

    The dough and bread were way too dry. i don’t think the hydration level is correct and some of the measurements are off. For instance, the yeast measurement for the 9x4x4 loaf is listed at 9 gms or 1 tsp. One teaspoon of yeast weighs 4 grams not 9 grams. I compromised and used 6 grams. It seemed to rise ok, but the finished product was very dry as was the dough. I added more water but was only guessing at that point. Don’t think I will make this recipe again.

    1. Hey Debra. Sorry to hear that. I checked the recipe again and the hydration is correct. Yes, the yeast is 2 tsp of instant yeast. Sorry about that. Thanks
