    Thanks so much for this. It’s delicious! I especially appreciate that you weighed the strawberries and sugar, as opposed to listing them by volume.

        1. Yes, Alex. I’ve used it to fill cakes and cupcakes more than once. Cook until it’s a nice thick consistency.

  8. Do you have to refrigerate the cake after you put the strawberry filling in it or is it ok to sit out?

    1. Kim strawberries do have a little shelf life of 2 to 3 days I think. I have never kept it long outside but you would give this the same treatment you give desserts with fresh fruits.

  9. I was making this and in the “Method” area it says to add salt. In the “ingredients” and “instructions” area the salt is omitted. Is there any salt in this recipe?

    1. Yes, Ryan. Just a pinch of salt is always good in a recipe. Thanks for bringing it to my attention. I have added the pinch of salt. Must have forgotten to write it.

    Can I make a bunch of this and can it? Like jam? I’ve access to tons of fabulous strawberries, and want to keep it for the winter.

    1. Geralyn – you can make a ton of this and keep it in the freezer in ziplock bags too! Which is what I usually do, so I can use this for my cake during the year. You can also can it like jam but I have not done that so can’t tell you how long it will stay. Thanks
