Once I make this strawberry filling, if I’m using it on top of a pastry/danish, can I fill my pastry and then bake it with the filling in it? I don’t want to over cook or ruin the strawberry filling!

    1. You can use this filling in pastry and then bake it – just make sure you filling is thick so it wont’ spill over.

Hello! How much would you say should go on a 8 inch round cake? 1 cup?

    1. This batch should be enough to fill an 8 inch round. It really depends on how thick you want to fill the cake.

Is it OK to make this ahead and freeze? If yes, for how long it can be freezed or refrigerated?

    1. Yes Rashmi you can make it ahead and freeze it. It will stay in the fridge for 3 days in the freezer for about a month. To thaw leave it in the fridge over night

Can v avoid using corn starch ?

    1. The cornstarch / Cornflour is the thickening agent so if you omit the cornflour then add the same amount or less of arrowroot. Thanks

Hi the ingredients says 1/2 cup water divided why and when is it divided? In the steps it just says to place the strawberries in the pot with other ingredients.

    1. Ah Sorry Angelina. It does not need to be divided anymore. I use to use half the water to make a cornstarch slurry before but now I just make it this way. I have removed the word divided.. Just follow the recipe as is. Thanks for bringing it to my attention.

Lovely strawberry filling/sauce! I love that you wrote something about in a cake, make sure you use a buttercream dam. Hehe. I agree, you have to keep your lovely sauce IN the cake layer! I love all the dishes you made with this sauce. I will be making this soon!

    1. Yes Elaine – you do need to add that dam if you want that filling to stay in.. Thanks
