These homemade strawberry popsicles are made with just three ingredients and take just five minutes. Make them with fresh or frozen strawberries any time of the year.

It seems we have skipped spring this year because summer is already upon us. In fact, this week we already had a few days with 40C, which feels more like hot summer days.
As always, this time of the year, we have a variety of cold treats, including ice creams, smoothies, milkshakes, and of course creamy popsicles in many flavors. You can find some more simple and easy recipes for homemade ice creams and pops here.
Why make homemade popsicles?
- I like making homemade popsicles. It enables me to use more fruit as compared to sugar-loaded store-bought popsicles. In fact, in this one I use honey.
- And adding yogurt instead of cream keeps the pops creamy, yet light and fruity.
- Also, it takes just 5 minutes to make and you need only three ingredients.
- And you can make it with fresh or frozen strawberries.

Ingredients & substitutes
- Strawberries - I'm using fresh strawberries in the season. But these are so popular with my kids that during the year I freeze the fresh strawberries, and then use them later as frozen berries.
- Yogurt - I like to use yogurt or coconut cream because it makes it more creamy and still not as high-fat as ice cream. Of course, you can omit the yogurt or coconut cream to keep them simple. Sometimes I like to add vanilla ice cream to make them richer.
- Honey - For sweetness, I like to add a bit of honey but again feel free to omit. Alternatively, you can also use maple syrup.

Strawberry popsicle recipe
- Puree - Wash, stalk, and hull the strawberries. Save about ½ cup of chopped strawberries for the mold and place the remaining in a blender or a food processor.
Pro tip - The chopped strawberries for the mold are optional. I like a few bit of frozen strawberries in my popsicles. - Combine - Next, pour in the water, honey, and Greek yogurt. Blend with the strawberry puree until smooth. Taste and adjust sweetness and creaminess. Add more honey or yogurt as necessary.
Pro tip - Depending on how sweet the strawberries are, you may or may not need more honey. - Molds - Distribute the chopped strawberries equally between the popsicle mold cavities. Then, fill each cavity with the strawberry popsicle mixture.
- Freeze - Place the stick on and put the molds in the freezer for 4 to 6 hours or until frozen. To unmold the popsicles easily, simply dip the molds in lukewarm water. Then, lift each one out of the mold.
- Enjoy!

Variations
- Strawberry lemon popsicles - Add 2 to 4 tablespoons of lemon juice or lime juice and ½ teaspoon lemon zest. Combine well in a large or medium bowl before pouring into the mold.
- Mixed fruit and strawberry pops - blueberries, raspberries, blackberries, pineapple, and peaches are a wonderful combination with strawberries too
- Gelato- If you don't have popsicle molds you can freeze the mixture in freezer bags and crust the mixture into a gelato before serving.
- Paper cup popsicles - if you don't have popsicles, you can use small paper cups and popsicle sticks. Place them on a sturdy baking tray lined with parchment paper or paper towel to prevent them from moving before freezing. Alternatively, you can also use an ice cube tray!
- Vegan strawberry popsicles - if you can't use yogurt you can use coconut milk to make these.

Tips for Success
- To make the perfect strawberry popsicle, the first step is to choose high-quality ingredients. Select fresh, ripe red strawberries that are fragrant and juicy for the best flavor. Organic ingredients are always preferred for a healthier option.
- Next, slice the strawberries into small pieces for the filling and puree the rest in a blender until smooth. You can add a sweetener of your choice such as honey, agave nectar, or maple syrup to the puree.
- Customizing your popsicles with healthier options can make them even better for you. Instead of using water as a base, try using coconut milk or almond milk for a creamier texture. Additionally, adding a sprinkle of chili powder or cayenne pepper can give your popsicles a spicy twist while providing metabolism-boosting benefits.
- Once you have prepared your popsicle mixture, pour it into popsicle molds and freeze for at least four hours or overnight. To remove the popsicles from the molds, run the molds under warm water for a few seconds until they slide out easily.

These popsicles will keep in the freezer for up to 3 months.
You can leave them in the mold but I like to remove them out and layer them with wax paper on a tray to prevent them from sticking to each other.
For this recipe, we have used honey but you can of course use refined sugar as well. Having said that, if you prefer to omit sugar or honey completely use another sweeter fruit like pineapple, or peaches to enhance the flavor and sweetness.
I find the best way to unmold popsicles is to place them under running water for 30 seconds. You can dip them in warm water as well but if kept too long they can melt easily.

I made these and they were amazing.. I like the fact that they are not too heavy and rich like the ice creams.
