    At what stage can I refrigerate the dough and how do I reactive it the next morning

    1. You can let the dough rise in the fridge overnight. The next day, punch down. Then shape, proof, and bake. The dough will be cold so it will take longer to prove until double in size.

    The loaf was delicious and looked beautiful. I was trying out flour from a new mill, a whole wheat hard red and a bread flour mix of red and soft white. I don’t know the protein % on the bread flour mix, but it may have been higher than the AP called for in the recipe. Regardless, the loaf of bread was wonderful. I made it in 9×5 stoneware and it was a tall loaf.
