  2. Hi Veena mam. As per the recipe for the cake, it says use room temperature butter. Should the butter be very soft or should the butter be kept out of the fridge just one hour before creaming the butter and dark brown sugar? I’m planning to use brown butter. How many hours before shud I leave the brown butter outside from the fridge ? Can u pls help me out mam

    1. The butter at room temperature works fine to cream with brown sugar. Room temperature butter can be pressed with your finger and it will be slightly soft but not too soft. I keep mine out for an hour and it works great.

  3. Instead of corn syrup can I use golden syrup mam for the butterscotch sauce ? Can u pls tell us the best brand for golden syrup mam ?

        1. I think you can use whichever you like, Sharanya. I have not tried because I do not get it here.

  4. Hi Veena, I made your butterscotch cake using 3×7” round tins. My cakes have come out only 1” high. Should I have multiplied the recipe 3 times?
    I followed your instructions to the letter so why do you think this has occurred?

    1. Kauser each cake layer should be a little more than 1 inch tall. So when stacked together with three layers and three fillings it comes to about 4 inches tall. Hope that makes sense.

      1. Yes thank you for such a prompt reply. It’s great as I am going to bake them again tomorrow as I don’t like such shallow layers. I plan to use the measurement for one cake and bake two cakes to achieve height. I want to put an Isomalt sail on the top so need the height. Thank you again Veena.

  5. Hi Veena mam. Can I use softened brown butter instead of using salted butter? Will it work out? Because I feel brown butter gives that nutty flavour. Please correct me if I’m wrong mam.

  6. Hi, I have made this cake three times with smbc frosting and abc frosting…it is a no fail recipe..thank you for giving delicious recipe mam…my doubt is whether whipping cream frosting goes well with this cake? Whether it will get hard while serving chill?

  7. My butterscotch sauce is grainy.Can I use it for the cake batter?

    1. Hridya, Sounds like the sugar crystalized. You can still use it in the cake batter. You can try to cook it again. Add 1 tsp lemon juice and let the sugar dissolve. Then cool it again to use on the top of the cake. I hope it helps.

    1. Shamma. You can but it will be a very soft consistency buttercream. Might be ok for the filling but for spreading on a cake it might be a bit difficult to spread. Thanks

      I have tried again to make butterscotch sauce but this time it went with slight burned taste..Can I use that one for cake?Is there any problem if I didn’t add that sauce?
      Also Mam I reside in kerala here its quite difficult to sour cream so can I add curd instead.In your notes I have seen yogurt worls well but here thick curd is available.

      1. If it has a burnt taste perhaps best not to use it, no? Yes, you can use yogurt in place of sour cream but make are the yogurt is thick like Greek yogurt.

  10. Hi Veena! I would like to make this butterscotch cake in a doll pan. Do you think 1 recipe suffice? What would you recommend the baking time and duration be for baking in a doll pan?
    Just a suggestion, would it be possible to show the quantities in the ingredients in metric quantities( in grams) as that would be more accurate. Thank you!

    1. Amrita. This will be good for an 8-inch doll pan. It will take close to 60 minutes to bake. Make sure to use a heating core and check for doneness in the center with a skewer. Not sure what happened to the grams and mls in there. All my recipes are with both metrics and imperial. I just fixed it. Now it should work. Thanks for letting me know

        1. If you change the number of servings in the recipe card below to 12 or 14 you should be able to make 2 x 9-inch cakes layers.
