    Question on frosting. If am using whipping dream instead of buttercream frosting and its in hot weather what can I do to help with keeping it stiff and preventing melting. My clients prefer fresh cakes with whipping cream and not fondant and am finding it challenging

    1. Yes, Naomi. Butter and whipped cream are not easy to use in hot climates. Which is why I used to use chocolate ganache type of frosting for my cakes.
