  1. I double the recipe it smelled so amazing but it’s been almost 2 hours it’s still a little warm but it hasn’t thickened up enough I think it will totally soak my crust …help what do I do from here

    1. Hey Rosie. Usually, it will thicken as it cools. Unless you have not thickened it enough during cooking. You can cook it for a little while longer also you can add 1 tsp of cornstarch with water and give it another boil.

    1. George, this makes about 2+ cups, just enough to fill two or three layers of cake. But, this recipe can be doubled and tripled successfully. Thanks

    1. Absolutely, Connie. You can use it in ice creams too. You can also freeze the filling itself.

    This recipe is delicious, but not anywhere near thick enough to use as cake filling. Ended up using it as cake sauce!

    1. Hey Sam. If it is not thick enough it means you need to cook it to the right consistency until all the cornstarch has boiled and activated. It must look glossy.
      Some strawberries are very juicy so you may have more juice which may need a few extra minutes.
      But, you must boil to thicken. Of course, you can add more cornstarch but that tastes very starchy so I do not recommend that.

  9. Turned out great. So yummy. Step one is written in a way that confused me. I thought it said put half of the water and sugar and lemon juice. Whoops. Not sure if anyone has made this mistake too.

    1. Hey Kristen, Yes, you use half the water first in the fruit with the sugar. and then, the remaining half with the cornstarch to make a slurry. Hope that makes sense.
