Use leftovers to make this scrumptious turkey sandwich. Challah bread with cranberry sauce, roast turkey or chicken, cheese, and veggies makes this the best quick lunch or dinner in no time at all.

The day after a festive meal is always the laziest day for me. I hate doing anything. All I want to do is sit in front of the TV and relax. Of course, that all end with - mama, I'm hungry. Thank god for leftovers!! Right?
Every time I have leftover turkey, roast chicken, roast beef, roast lamb, they just begs to be used in a sandwich. The great thing about Thanksgiving is of course that leftover cranberry sauce.
- Bread - We love challah but you could just about use any sandwich bread for this sandwich.
- Veggies - for me, adding veggies to a sandwich is a great way to get kids to eat more veggies. And, let's face it a tall sandwich looks so much better and desirable. Make sure to cut the veggies thin so they are easier to add to the sandwich otherwise it will be hard to bite into it.
- Butter - you can omit the butter but it just adds a little more to the delicious challah.
- Cheese - I used 2 slices of Emantle cheese but cheddar or any slice cheeses would work for this.
- Cranberry sauce - when I have cranberry sauce on hand I use it. If not, you can also use mayonnaise or mustard. You can even use some turkey gravy to make a moist turkey sandwich

Step by step instructions
- Use a bread knife and slice the challah in between and spread a generous amount of butter, followed by the cranberry sauce
- Top it with slices of cheese and turkey, followed by the lettuce, cucumber, and tomato.
- Sandwich the top layer and secure with a cocktail stick or skewer.
Note - the stick or skewer helps keep everything in place but make sure to remove or tell the person know so they don't bite into it accidentally. - Cut the challah in half for presentation or serve whole. Alternatively, you can also toast the sandwich in a .
- I like to serve mine with a side of baked French fries.

What to serve with sandwich
- Celery salad, carrot salad, or cabbage salad
- Tomato Mozzarella salad or Avocado salad
- Oven-baked potato chips or potato wedges
