  1. Hi! Everytime I make a tall buttercream cake the layers bulge, I make sure to cut even every cake and make don’t apply too much filling. Any ideas on what is happening. I live in a very hot country, that may apply but i don’t know

    1. Max. It all depends on the type of cake you are using. How heavy the layers are and if you are using support in between every 2 layers. Some cakes are lighter so you can stack a few layers without any internal support. Some cakes are heavier and need that internal support. Otherwise, they buckle under their own weight. Also, a butter-based frosting will help hold the layers in place better. And yes, if you live in a hot place that will thaw everything making the cake and frosting weeker to support them selves.

    Hi Veena, I have a bride requesting a 9″ double barrel cake. Is this diameter too big to achieve the look of a double barrel, and if it is possible, would you do 3 separate (separated by cake boards) tiers? Thanks so much for all your tutorials. I have watched them often and love them.

    1. Hey Shirley. A 9-inch double barrel is going to be huge if it’s on its own. If it’s part of a large cake it would be ok.
      The idea of a double-barrel is that is should look tall and slender not huge.
      So if you have a 9inch diameter with 8-inch height will look big. Unless that’s the look you are going for.

    Thank you so much for this post, as I’m slowly learning more and more. I am still a little confused though. So in order to make a double barrel cake would I insert a cake board under each cake layer? (Sorry if that doesn’t make sense)… I am trying to make a two tiered double barrel cake (bottom layer 8 inch with 3 layers, and top tier is 6 inch with 3 layers as well)

    1. Minnie -What you are trying to do is two tiers. Each cake has three layers which is quite normal.
      You would need a board below each tier (3 layers) – and of course, dowels in the 8 inch before you place the 6-inch on top.

    Am planning to bake chocolate marble pound cake 8inches x4 with ganache for filling and covering. If I want to do a double barrel method do I still need to dowel and use cake boards in between this will not be a tiered cake.
    Its for my sons second birthday and am a homebaker don’t know much about the technicalities.

    1. Hey Priyadarshani – for an 8 x 4-inch tall cake you don’t need any dowel. If you want you and add another 2 inches so 8 x 6-inch tall without any dowel.
      BUT, if you choose to add – 8 x 8-inch tall cake, you need to add dowel and a cake board in between at the 4-inch mark. So what you do is.
      stack 2 layers -8 x 4-inches – add three dowel – frosting – cake board – next two cake layers – which should then finally be 8 x 8-inch tall.

        I think my question was wrong, I will be baking 4cakes each 8inch round each max 1.5 to 2inches tall to stack them do I still have to dowel?

        And also can I sugar syrup them?

        1. Yes, if you have 4 cakes about 1.5/2 inch – then you will need a cake board and dowels at the 4-inch mark –
          So 2 cakes – dowel – board – 2 cake.
          Total – 4 cakes
          Make sense? If possible use a 7-inch cake board in between the layers – make it easier to frost.
          And yes, you do need to sugar syrup them as well to keep them moist.

  5. How do you dowel a three tier double barrel cake?

    1. You dowel it like you do the other cakes. The only difference is that you have the bottom and top tiers the same size. I hope that’s answers your question. Feel free to ask again.
