    This was an eye opener!! I recently used a recipe (that a local chef had altered) and found a smiliar one on the internet. Chef replaced honey for sugar, dropped one egg, bummed up 1/2 tsp of soda and reduced the oven temp to 325F. I read about sugar substitues and go “OMG!!!!” Of course I had read both the recipes carefully and this article bought me one step closer to understanding baking! Thank you!
