After years of working with chocolate as a cake decorator, I’ve learned that simple chocolate recipes are often the ones where quality matters most. There aren’t many other flavors here to hide behind, so use a dark chocolate you genuinely enjoy eating.
I also don’t treat French hot chocolate like a large mug of regular hot cocoa. It’s much richer, so I prefer serving it in smaller cups, often with a little whipped cream. As the cream melts into the hot chocolate, it softens the intensity of the dark chocolate beautifully.

What makes French hot chocolate different?

The result should be thick enough to lightly coat a spoon but still pourable. You don’t need cornstarch to thicken it—the melted chocolate provides the body.
My tip: If your hot chocolate is richer or thicker than you like, don’t dilute it with water. Add a splash of warm milk until the consistency is right for you.
Ingredients and substitutions
- Whole milk – Whole milk gives the best balance of richness and fluidity. You can use another milk, but lower-fat or non-dairy milk will give you a lighter hot chocolate.
- Heavy cream – Adds richness and gives the drink its creamy mouthfeel. You can replace it with additional whole milk for a lighter version.
- Dark or semisweet chocolate – Use chocolate you enjoy eating. I prefer dark chocolate because the cream and sugar already add plenty of richness and sweetness.
- Unsweetened cocoa powder – Intensifies the chocolate flavor without requiring a large amount of melted chocolate.
- Brown sugar or honey – Adds just enough sweetness to balance the dark chocolate. Adjust according to the chocolate you use.
- Cornstarch – You only need a teaspoon. It gives the drink its slightly thicker, velvety consistency.
- Vanilla extract – Rounds out the chocolate flavor.
- Salt – I would add a small pinch to the new recipe. It’s missing from the old card, but it will make the chocolate taste better. Unless you deliberately don’t want it, I’d add about ⅛ teaspoon.
Choosing the best chocolate
For the best French hot chocolate, use a good-quality semisweet or dark chocolate rather than chocolate-flavored candy or coating chocolate. I prefer around 60% dark chocolate for a good balance of chocolate flavor and sweetness.
If you use a much darker chocolate, you may need a little more sugar. With sweeter semisweet chocolate, taste before adding extra sugar.
How to make French hot chocolate
- Combine the dry ingredients. In a small saucepan, whisk together the cocoa powder, brown sugar, cornstarch, and salt. Add a small amount of the milk and whisk until smooth. This prevents little pockets of cocoa or cornstarch from forming.
- Add the dairy. Whisk in the remaining milk and heavy cream. Heat over medium-low heat, stirring frequently, until hot.
- Add the chocolate. Add the finely chopped chocolate and continue stirring until completely melted and smooth.
- Thicken. Bring the mixture to a gentle simmer and cook for about 2 minutes, stirring constantly. The cornstarch needs that heat to thicken properly.
- Finish. Remove from the heat and stir in the vanilla. Pour into small cups and serve hot, with whipped cream if desired.
Veena’s tip
Don’t judge the consistency too early. Cornstarch needs to reach a simmer before it thickens properly. Give it those two minutes before deciding whether your hot chocolate is too thin.
Storage and Make Ahead
- Storage: Let the French hot chocolate cool, then refrigerate it in an airtight container for up to 3 days. It will thicken as it chills because of the chocolate and cornstarch.
- Reheating: Reheat gently in a saucepan over low heat, stirring frequently. Avoid boiling it again. If it has become too thick, whisk in a little milk until it reaches the consistency you like.
- Make ahead: You can prepare the hot chocolate 1 to 2 days ahead and refrigerate it. Reheat just before serving and adjust the consistency with a splash of milk if necessary.
- Freezing: I don’t recommend freezing it. Dairy and cornstarch can separate after thawing, which can affect that smooth, velvety texture.
