    I need to make a gluten free and sugarfree red velvet cake. Would it work to substitute for xylotol and gluten free flour mix instead of flour and granulated sugar? I know it’s a big change but worth asking in case you’ve tried it!

    1. Sorry, Mieke, I have not tested this recipe for sugar-free or gluten-free. So, I’m not sure it will work. I suggest you look for a tried and tested recipe.

  2. Quick question, if I wanted to make this as a 2 x 10 in cake would I simply triple the recipe?

    1. Yes, Missy. 3 times this recipe would work great for 2 tall 10-inch round cakes.

    Veena, I made your red velvet twice now as part of my “research and development” to find my “go to” cake recipe for that flavor. The first batch we didn’t find had enough flavor. My husband said it didn’t have enough of a chocolate flavor and I agreed it was a little bland compared to others I’ve had. The second time I made it, I used 4 tbsp. plus 1.5 tsp of Ghirardelli Dutch processed cocoa powder, 1 tbsp. of Lorann Red Velvet bakery emulsion (combined with the water as you instructed) and increased the vanilla to 2.5 tsp. The result- amazing flavor without being overly chocolatey for red velvet! With these changes, it will be my standard cake flavor. Thanks for the recipes. I like learning from you.

    Hi Veena. I tried the receipe. It was so fluffy and moist . But I feel the sugar content is less. Can I add 50grams of sugar more to this receipe ???
