    Pastry day 5 – done. I’ve used your recipe for pate sucree to make fruit tarts. It worked perfectly, but I found it was better to make small tarts instead of a large one with the custard filling.

    1. Thanks for the feedback, Kevin. That’s true you can make smaller tarts with the custard filling. However, you can make a large custard-based tart provided you have the right consistency of pastry cream custard. It must be thick so it sets rather than spills when you cut. Hope that makes sense.
