    Hi Veena,
    I just want to ask you something about this cake. I already made this cake. It was superb. Everybody liked it. Last time when I made this I made this with Swiss meringue buttercream. But this time I want to make this cake for one of my friend ans she needs a fondant cake with butterscotch flavour. I’m not very comfortable with buttercream when I have to cover a cake with fondant. I always use ganache for that. So I just want to know is it possible to frost this cake with white chocolate ganache and then use fondant to cover it. Please reply.

    Hi! I finally made the cake and everyone loved it! I do have a question though. My cake turned out more dense. Is that the way it should be? I did it exactly like the recipe. I also used 2 8″ pans and it didn’t rise up to be 2 inches tall. Was I supposed to use egg whites instead of whole eggs? I chickened out on the swiss merangue buttercream and used Flavorright whip-in-ice and put butterscotch in it. Thanks so much for a great recipe!

    1. Hey Tammy, Glad you had success with this recipe and everyone enjoyed it. As you can see from the images it’s a light and airy cake. This comes from whipping the eggs (whole eggs) until light and foamy but also making sure not over mix when you add the rest of the ingredients. If you over mix the volume you added to the eggs will have deflated. Could that be a possibility with your cake?

    Made this last week for my own birthday – doubled the batch and yet we had no leftover. I cannot believe how good this cake is. My kids dont’ usually eat cake but they do love the butterscotch flavor so they enjoyed this one very much. The butterscotch sauce was so easy to make. I’ve never made it myself before but after eating this? I’m never buying it again. My kids were licking the spoon.
