Avocado is one fruit that gets eaten at least three times a week in our home. Whether I throw it in an egg salad or between two slices of bread avocado is always a favorite. Truth be told avocado can be bland on its own but a few additions and it's absolutely delicious. My daughters' favorite breakfast is avocado on toast.
Why make this sandwich?
- It takes as little as 15 minutes to make this sandwich.
- Almost all ingredients are pantry staples or easy to find.
- All you need is one medium bowl, that can hold everything together. You can serve this on its own as an avocado dip, avocado egg salad, or sandwich spread.
- Avocado needs nothing more than salt and black pepper but there are so many ways to add flavor to it.
- I have made it with boiled egg but if time is not a luxury sometimes I make the spread with avocado and top the sandwich with a fried egg.
- Today, I have used my Pullman sandwich bread, challah bread, and tortilla to make a wrap but you can also use whole-grain breads, or sourdough bread.

Ingredients and substitutes
- Bread - you can use any type of bread - white bread, whole-grain braid, or tortilla. So pick your favorite bread.
- Avocado - use fresh ripe avocado and cut it just when you are ready to prepare the spread because avocado oxidizes quickly
- Egg - use a hard-boiled egg. Add the eggs to cold water and bring the water to a boil. Boil for 3 minutes then turn the heat off, cover, and let rest for 10 minutes. After 10 minutes you can peel and grate it. Tip- adding a slice of lemon in the water when boiling helps peel the eggshells easily.
- Sour cream - I use about 20% sour cream. You can also use cream cheese, Greek yogurt, cheddar cheese, or mayo.
- Lemon juice - prevents the avocado from oxidizing. It is always best to use fresh lemon juice
- Herbs - We like cilantro but parsley or green onion leaves work great too. finely chop the herbs. A few torn basil leaves add a nice refreshing flavor too.
- Optional ingredients -
- a teaspoon dijon mustard is a wonderful addition.

How to make an avocado egg sandwich
- Cut the avocado in half, remove the seed, and put the flesh in a large bowl. Use a fork to mash the avocado.
Pro tip - avocado oxidizes easily so cut and mash it just before you are going to prepare the sandwiches. - Add the lemon juice and stir to combine well. Grate the boiled egg
Pro tip - lemon juice can slow the process of oxidization so combine it will into the mashed avocado. - Add the sour cream and chopped parsley or cilantro. Season with salt and pepper
- Sandwich - Spread it on sandwich bread slices and cut the sandwich into half and serve.
Wrap - You can also spread this on a tortilla, roll it up, slice it in half and serve.

Variations
- Avocado egg salad sandwich - Add some veggies to the sandwich like spinach, lettuce, cucumber slices, tomato slices, and pickles.
- Avocado egg dip Serve this with gluten-free crackers, pita chips, veggie sticks, instead of bread similar to hummus.
- Toasted sandwich - grill the sandwich before serving to make a warm toasted sandwich in winter
- Salmon salad - top the egg salad with smoked salmon to make this a quick lunch.
- Cheese sandwich - use cream cheese with avocado instead of sour cream.
- Lunch - for a full lunch serve with a slide salad such as Celery, carrot, cabbage, Tomato Mozzarella salad or Avocado salad and baked fried such as bake potato chips or potato wedges
