Growing up in India, pineapple and coconut were such everyday fruits that they didn’t feel “tropical” to us—they were just part of our daily life, from chutneys to desserts. But I remember how excited the adults would get when they made pina coladas on weekends, blending rum, pineapple juice, and coconut milk into that creamy, sweet cocktail. Of course, we kids wanted to feel fancy too, so we got our own virgin pina colada in tall glasses with pineapple wedges, pretending we were on a Caribbean vacation right in our backyard.
It wasn’t until I started traveling that I realized how popular pina coladas are worldwide, especially in the Caribbean and Latin America, where they’re loved for that perfect balance of rum, pineapple, and coconut. Now, whenever I make this easy rum pineapple coconut cocktail at home, it’s like a sip of nostalgia—bringing back those childhood memories while adding a little grown-up twist.

Ingredients and substitutes
- Pineapple – I use fresh, strained pineapple juice when I make a single serving. But when making a few drinks in a pitcher, I use fresh pineapple chunks. You can also use frozen or canned pineapple juice. And save a piece for garnish by slicing it into a wedge.
- Coconut – Coconut milk from a can or carton works great. Cream of coconut is more concentrated, so I do not recommend it. But if that is all you have, use just half the measure (30 ml).
- Lemon juice – Helps break down the sweetness of the drink. Lime juice works too.
- Sugar – Pineapple juice is sweet, so yes, you can omit sugar. And yet, this is a lovely, sweet drink that tastes great.
- Rum – Use a white rum instead of the dark-aged variety. But you can certainly use a combination, too.

Classic
- Add to blender: Rum, coconut cream, pineapple juice, and ice.
- Blend until smooth, creamy, and frothy. Add more ice for a thicker frozen pina colada or a splash of pineapple juice for a thinner consistency.
- Taste: Adjust sweetness with simple syrup if needed.
- Serve: Pour into chilled glasses, garnish with a pineapple wedge or cherry, and enjoy your tropical escape
My cheat version without a blender
- In a cocktail glass (or cocktail shaker), add some ice cubes and top it with white rum, pineapple juice, lemon juice, sugar, and coconut milk. Shake or stir to combine. Garnish with a pineapple wedge and a straw.

- In a blender, add the crushed ice, rum, pineapple juice, coconut milk, lemon juice, and sugar. Blend until smooth.
- Pour into individual smoothie glasses. Garnish with a pineapple wedge and a straw.
Pro tip – Taste and adjust sweetness and consistency. You can add more pineapples or coconut milk to your taste.
How to Make a Frozen Pina Colada
To make a frozen pina colada, simply add 1–2 cups of ice to your blender with the pineapple, coconut cream or coconut milk, rum, and pineapple juice, then blend until smooth and frosty. This creates a creamy, slushy version perfect for hot summer days or serving at BBQ parties.

- Mango Pina Colada – Use mango juice instead of pineapple juice.
