Chestnut Chicken
This chestnut chicken combines tender chicken thighs, sweet caramelized onions, and roasted chestnuts in one comforting skillet dinner. Finished in the oven, it’s an easy recipe with rich, savory flavors that make it perfect for cozy family meals or holiday entertaining.
Roasted chestnuts add a subtle sweetness and buttery texture that pairs beautifully with the caramelized onions and juicy chicken. Best of all, this recipe comes together with simple pantry ingredients and very little hands-on time.

I always look forward to chestnut season because it’s one ingredient I don’t use often enough. Their naturally sweet, buttery flavor transforms simple chicken into something that feels just a little more special. Combined with slow-caramelized onions, this has become one of my favorite comfort food dinners during the cooler months. It’s easy enough for a weeknight but also elegant enough to serve when family or friends come over.

Ingredients & Substitutes
- Chicken thighs – Boneless or bone-in thighs both work well. Chicken breasts can be substituted but may need less cooking time.
- Chestnuts – Vacuum-packed or roasted chestnuts are the easiest option. Fresh chestnuts can also be used if roasted and peeled first.
- Onions – Yellow or sweet onions caramelize beautifully.
- Balsamic vinegar – Adds depth and balances the sweetness of the onions.
- Soy sauce – Adds color and savory flavor.
- Honey or date syrup – Enhances the natural sweetness of the onions and chestnuts.
- Garlic – Fresh garlic gives the best flavor.
- Sriracha – Optional, for a touch of heat.
- Parsley – Adds freshness before serving.

Step-by-step: Baked chestnut chicken with caramelized onions
- The first step in preparing this delectable meal is to preheat your oven to 375°F / 190°C/ Gas mark 5. This temperature will ensure the chicken cooks evenly and develops a nice golden color. While the oven is heating up, it’s a good time to chop the onions and prep the rest of the ingredients.
- Next, pat the chicken dry with a paper towel.

- Caramelize onions – Heat olive oil over medium-low heat in a skillet and add the chopped onions. Season with salt and sugar and slowly cook them, stirring occasionally, until they become rich, golden brown, and develop a sweet, caramelized flavor.
- Flavor – Once the onions are caramelized, add the garlic, balsamic, dark soy sauce, honey, and sriracha. Then, move the caramelized onions to the side of the pan.
- Sear chicken – Add a splash of olive oil to the same skillet. Then, carefully place the chicken into the skillet and let it sizzle for 3-4 minutes on each side.

- Rearrange – Once the chicken is nicely browned on both sides, rearrange the chicken and onions in the pan. Then, place the caramelized onions on top of the chicken, spreading them evenly to ensure every bite is infused with their irresistible sweetness.
- Chestnuts – Add the chestnuts to the pan and half a cup of water—season with salt and pepper.

- Bake – Cover the dish with foil or a tight lid and let it bake in the oven for about 40-45 minutes.
- Rest – When the timer goes off, remove the foil and let the dish rest for a few minutes before serving.

Storage
- Refrigerate leftovers in an airtight container for up to 4 days.
- Reheat gently on the stovetop or in the microwave until heated through.
- Freeze for up to 3 months and thaw overnight in the refrigerator before reheating.
- The flavors become even better the next day, making this a great make-ahead meal.
What should I serve with chestnut chicken?
Mashed potatoes, basmati rice, buttered noodles, roasted vegetables, or crusty bread all pair beautifully.
