Instructions
Oven - The first step in preparing this delectable meal is to preheat your oven to 375°F / 190°C/ Gas mark 5.
Caramelize onions – Heat olive oil over medium-low heat in a skillet and add the chopped onions. Season with salt and sugar and slowly cook them, stirring occasionally, until they become rich, golden brown, and develop a sweet, caramelized flavor. This process may take around 20-30 minutes, but the result is well worth the wait.
2 large Onions
Flavor – Once the onions are caramelized, add the garlic, balsamic, dark soy sauce, honey and sriracha. Then, move the caramelized onions to the side of the pan.
Sear chicken – Add a splash of olive oil to the same skillet. Carefully place the chicken into the skillet and let it sizzle for 3-4 minutes on each side. This step will give the chicken a beautiful color while sealing in its juiciness.
2 lbs Chicken thighs, 1 tsp Salt , 1 tsp Black pepper powder
Rearrange – Once the chicken is nicely browned on both sides, rearrange the chicken and onions in the pan. Place the caramelized onions on top of the chicken, spreading them evenly to ensure every bite is infused with their irresistible sweetness.
Chestnuts – Add the chestnuts and half a cup of water to the pan—season with salt and pepper.
1½ cup Chestnuts
Bake – Cover the dish with foil or a tight lid and let it bake in the oven for about 40-45 minutes. Pro tip - This will allow the flavors to meld together and the chicken to finish cooking to tender perfection.
Rest – When the timer goes off, remove the foil and let the dish rest for a few minutes before serving. Pro tip - This resting period redistributes the juices, making the chicken even more succulent.
2 tbsp Parsley
