- 1 tsp Baking soda
- ½ tsp Salt
- 4 large Eggs
- 350 g (1¾ cups) Sugar
- 120 ml (½ cups) Cooking oil
- 170 g (2 cups) Fresh coconut shredded or finely ground,
- 170 g (¾ cups) Sour cream
- 1 tsp Vanilla extract
- 240 ml (1 cup) Coconut milk
- 4 tbsp (4 tbsp) Sugar
- 113 g (½ cups) Butter unsalted, room temperature
- 226 g (1 cup) Cream cheese
- 250 g (2 cups) Powdered sugar
- 1 tsp Vanilla extract

- Oven – Preheat the oven to 324°F/ 165°C/ Gas Mark 3
- Pan – Spray and line a 9 x 13 sheet cake pan with parchment paper.
- Dry ingredients – In a medium bowl, sift together the flour, baking powder, baking soda, and salt – set aside.310 g All-purpose flour, 1 tbsp Baking powder, 1 tsp Baking soda, ½ tsp Salt
- Wet ingredients – In the bowl of a stand mixer with the whisk attachment, whip the eggs for a minute, then gradually add the sugar and continue to whip until light and fluffy. Next, gradually add the oil, followed by the vanilla extract.
