Indulge in a culinary delight that will transport your taste buds to new realms of satisfaction. Whether you’re a seasoned chef or a passionate home cook, this irresistible combination of chestnut chicken with caramelized onions promises to elevate your dishes to a new level of culinary excellence.

Chestnuts in winter are a wonderful treat and can be enjoyed in various ways. Whether you roast them over an open fire or purchase them pre-cooked to be boiled or steamed, nothing quite compares to the flavor of a chestnut.
There are many different ways to prepare chestnuts as part of a meal. From classic roasted chestnuts to using chestnuts as a stuffing for poultry or other meats, the options to add this mouthwatering treat to your culinary creations are endless.
Today, we use chestnuts in this delicious combination with chicken and caramelized onions.
Why is this the best recipe
- First and foremost, the combination of chestnut chicken and caramelized onions is a match made in culinary heaven. The rich, nutty flavors of the chestnuts perfectly complement the sweet, caramelized onions, creating an unparalleled harmony of taste.
- Furthermore, the meticulous preparation techniques we will guide you through ensure that every element of this dish is perfectly cooked. From the juicy, tender chicken breast to the crispy, golden brown skin, every bite is a decadent delight for your senses.
- But what truly sets this recipe apart is the art of caramelizing the onions. The slow-cooking process allows the natural sugars in the onions to caramelize, resulting in a sweet, savory goodness that adds depth and complexity to the dish.

Ingredients and substitutions
- Let’s start with the star of the show: chestnuts. These earthy and nutty gems bring a unique depth of flavor to the dish. If you can find fresh chestnuts, they are worth the effort. However, for convenience, you can opt for canned or vacuum-packed chestnuts that are readily available. Just make sure to drain and rinse them before using.
- Next, we have the succulent chicken. Bone-in, skin-on chicken thighs are recommended, but I prefer skinless, boneless chicken thighs. This cut offers a rich flavor and tender texture that pairs beautifully with the chestnuts and onions. If you prefer white meat or have dietary restrictions, you can substitute boneless, skinless chicken breasts. However, keep in mind that the cooking time may vary slightly.
- Now, let’s talk about the caramelized onions. These sweet and savory wonders are the perfect complement to the chestnuts and chicken. To achieve that luscious caramelization, start with a generous amount of onions. Yellow or sweet onions work best for this recipe. Slice them thinly and cook them slowly over low heat, allowing them to soften and develop that irresistible golden-brown color.
- If you have dietary restrictions or want to add more variety to the dish, feel free to experiment with substitutions. For a vegetarian twist, you can replace the chicken with a plant-based protein such as tofu or seitan.

Step-by-step: Baked chestnut chicken with caramelized onions
- The first step in preparing this delectable meal is to preheat your oven to 375°F / 190°C/ Gas mark 5. This temperature will ensure the chicken cooks evenly and develops a nice golden color. While the oven is heating up, it’s a good time to chop the onions and prep the rest of the ingredients.
- Next, pat the chicken dry with a paper towel.
Pro tip – This step is crucial to achieving a beautiful sear on the chicken and preventing excess moisture from interfering with the cooking process.

- Caramelize onions – Heat olive oil over medium-low heat in a skillet and add the chopped onions. Season with salt and sugar and slowly cook them, stirring occasionally, until they become rich, golden brown, and develop a sweet, caramelized flavor.
Pro tip – This process may take around 20-30 minutes, but the result is well worth the wait. - Flavor – Once the onions are caramelized, add the garlic, balsamic, dark soy sauce, honey, and sriracha. Then, move the caramelized onions to the side of the pan.
- Sear chicken – Add a splash of olive oil to the same skillet. Then, carefully place the chicken into the skillet and let it sizzle for 3-4 minutes on each side.
Pro tip – This step will give the chicken a beautiful color while sealing in its juiciness. - Rearrange – Once the chicken is nicely browned on both sides, rearrange the chicken and onions in the pan. Then, place the caramelized onions on top of the chicken, spreading them evenly to ensure every bite is infused with their irresistible sweetness.
- Chestnuts – Add the chestnuts to the pan and half a cup of water—season with salt and pepper.

- Bake – Cover the dish with foil or a tight lid and let it bake in the oven for about 40-45 minutes.
Pro tip – This will allow the flavors to meld together and the chicken to finish cooking to tender perfection. - Rest – When the timer goes off, remove the foil and let the dish rest for a few minutes before serving.
Pro tip – This resting period allows the juices to redistribute, making the chicken even more succulent.
