Have you ever had leftover chicken or beef roast that you can use in a sandwich? Once in a while, I like to use tortilla wraps. These make easy kids lunch boxes and snacks too.
When Aadi comes back from basketball practice he is usually quite hungry and this is something that he will make on his own if I have the stuff ready in the fridge.
- Tortilla/chapati wrap - I use store-bought or homemade whole wheat Tortilla or Indian Chapati. My kids can eat chapati at any time of the day with just about anything. It's whole wheat, so I usually don't complain.
- Avocado - Now, I do not need to tell you how absolutely delicious and healthy this fruit is. All it needs is a little sprinkle of salt and pepper, a squeeze of lemon and it's delicious on its own. We often just make avocado sandwiches for a quick snack.
- Yogurt dressing - I use this dressing on my salads as well as my wrap. A blend of yogurt, mustard, and honey makes this an amazing combination.
- Chicken - leftover or freshly made - I often make extra chicken, so I can have leftovers for sandwiches. You can also use cold cuts instead of roast chicken leftovers.

Step by step instructions
- Dressing - Combine all dressing ingredients in a bowl - set aside.

- Tortilla - Warm the tortilla on a skillet for 30 seconds on each side.
Tip - warming the tortilla makes it softer but just 30 seconds. If you heat it too long it tends to get crisp quickly and break when you roll.
- Place the tortilla on a plate or sandwich wrapper.
- Spread a generous amount of dressing. Followed by the shredded chicken, avocado, lettuce, cucumbers, and tomatoes.
- Season with salt and pepper. Add more dressing if you like a moist chicken wrap.
- Fold the wrap as shown in the video -
- First, fold the bottom over the ingredient firmly.
- Then fold the sides over to close the filling in.
- Continue to roll the wrap to the end.
- You can wrap it in a sandwich wrap which keeps everything in place and makes it easier to eat.
- Enjoy!
What to serve with sandwich
- Celery salad, carrot salad, or cabbage salad
- Tomato Mozzarella salad or Avocado salad
- Oven-baked potato chips or potato wedges
