This post is definitely a keeper for any person who loves their lamb roast and who plans on cooking it. The instructions will guarantee that the meat turns out perfectly delicious and moist. I’ve already pinned it. We LOVE our lamb roasts and have them several times a year. I’ve never tried using coriander on my roast — I’m sure it will give it a lovely taste.

OH wow….you had me at garlic and fresh rosemary….but using the mortar/pestle route means the whole house has that gorgeous aroma. YAY. I totally agree with you about the meat thermometer…it’s the only way to get it right!
