  2. On day 3, after frosting, do you leave your buttercream and fondant cakes out at room temperature over night or in the refrigerator? Is it true the refrigerator dries out cakes?

    1. Hey Rosa. You can keep buttercream or fondant cakes in the fridge or outside. Depending on what filling and frosting you use. If the cake has anything perishable it has to be kept in the fridge if not it’s perfectly fine to leave it out on the counter. The refrigerator has the tendency to dry everything out bread, and even cakes. Which is why it is very important to wrap well in cling wrap to retain moisture. Also why we add simple syrup to our cakes so we can add back some of that moisture.

    I am making my first fondant cake for my baby’s first birthday. I will do the cake and fondant myself, but have purchased fondant caterpillar to go on the cake on Etsy. Will the caterpillar be okay as it was made about a month before the party?

    1. Yes Anne. Toppers usually have a long shelf life. Commercial fondant often has a shelf life of over a year. As long as you keep it in covered and dust free it should be ok. Check with the person you purchased the topper from – She will be able to tell you the best shelf life depending on the ingredients she used

  5. I was wondering i baked a cake on friday and my sisters birthday is tomorrow Saturday can i fill and crumb coat the cake and leave it in the fridge in the night. Will It be okay to decorate on Saturday morning?

    1. Yes of course.. you can bake the cake on Thursday as well. Crumb Coat on Friday then decorate on Friday or Saturday..

  6. Hi Veena, thanks for the timeline you shared. I have to deliver a cake on Friday,it will travel by air to Hyderabad for a birthday celebration on Tuesday. It is a chocolate cake. What filling and frosting will stay fresh for so many days? Pl guide. This is my second order..thanks

    1. I’d suggest use a Vanilla or Chocolate Pound cake with simple syrup – ganache frosting for best results if you want you can use American Buttercream.

    1. Happy Birthday to your baby Santosh – You can get the basics of cake decorating on this post – how to level tort and fill a cake
      If you want to use fondant on the cake – you can use buttercream or ganache to fill your cakes not whipped cream.
      Chill your cake for a few hours so the buttercream or ganache is nice and firm.
      You can put your fondant cakes in a fridge.. they will sweat and then they will dry out in a few hours as well.

    I need to make a cake for Saturday . Today is Monday, is it too early to start baking, doing the buttercream filling and then the fondant. I need Friday to deliver the cake as the venue is 5 hours away. Thank you

    1. Well, if you see the timeline it will suggest the possible days for starting. I suggest you read it again and it will make more sense.

    I’m so glad I came across your blog. I am planning to bake a football cake for my husband’s 30th birthday. Now, I’m not a professional baker but do bake cakes as a hobby. However, this is the first time I’ll be working with fondants. Hence, I would appreciate your suggestion or advice. The following is what I intend to do.
    I intend to make an orange cake, which will be shaped as the football. And then I intend to make a dark chocolate cake for the pitch and my idea is to plant the football on the pitch. For the pitch I have bought green sugar paste and obviously the football would have white sugar paste.
    Firstly, do u think the cake combinations are fine?
    Secondly, the birthday is on Sunday so according to your timeline I should bake the cake on Thursday, right? Can I decorate the entire cake as I intend to do with frosting and fondant by Saturday night and keep it in the fridge until Sunday evening?

    I would appreciate any bit of advice. Thanks so much in advance.

    1. If you like the combination of Orange and chocolate then the combination is fine. Make sure you dowel the bottom cake before you plate the football. You can definitely bake on Thursday but take food hygiene care -for example if the weather is hot store cakes in the fridge. You can definitely be done with the cake by Saturday afternoon or evening for Sunday evening.

        I live in Switzerland and though it’s summer here the weather is not too much of an issue. But just to be safe I was going to put in the cakes in the fridge in any case.

    If i keep deciratef cake with fondant in fridge it becomes moist and kind of wet after taking it out from the fridge ..what i can do for it?

    1. Just leave it at room temperature… eventually the condensation will dry off. The higher the humidity the more the condensation and longer drying time. Air conditioning will help.
