  4. Hello Veena, thank you for your detailed recipe! I have a question for you: when I first made the dough and let it rest in the refrigerator for 30 minutes (before starting the lamination), the dough puffed up quite a bit and was very fluffy. As a result, it was slightly difficult to work with when I added the butter block because the butter and dough had very different consistencies, the dough being much softer than the butter obviously. Does your dough start rising right away when you make it? I used Instant Yeast, could it be the reason? Thank you in advance!

    1. Hey Natalie. The yeast must be in proportion to the recipe you are making.
      Yes, yeast can rise in 30 minutes.
      Also, the butter must always be soft room temperature until the recipe has requested for in case of lamination
      What dough are you making? I’d be able to answer better if I know what you making.
