    Thank you very much for the valuable information. I really appreciate tour time and effort you put in writing these notes and above all these are all free. I really liked your way of writing the different variations one can make by simply altering just the few ingridients in one basic recipe of making cake.
    I just want to ask you one question. I made a sponge cake yesterday by seperating egg whites n yolks. Foamed the whites with sugar and then incorporated the yolks.mixed the flour,vanilla essence,milk, oil and baking powder and the reukt was very good.it raised well.it was soft, air and fluffy. But it was tasting and smelling very eggy even after it was cooled completely. I do not know what happened. Can you please explain the reason.

    1. Well, if you use fresh eggs you don’t usually have any smell. I have been making cakes for so many years and never had this issue.
      Also when you break the egg remove the ‘eye’ that thick white little blob you get in eggs. It surrounds the yolk. If you remove that it helps with the smell.
      My aunt used to add a bit of lemon along with vanilla in the cake
      Some people also use turmeric to get rid of egg smell.
