    I do have a question, when baking 2 cake layers at once, do I place them side-by-side for the entire cooking time or rotate? Also for 3 layers, 2 side-by-side and one on lower rack? If rotation is needed, is it at the half-way mark of total cooking time? Thank you Veena for a wealth of information provided today.

    1. Maria. It really depends on the oven.
      If you use a fan assisted oven you don’t need to rotate and it can be kept on two shelves.
      If you dont’ use a fan assisted oven. Yes, it is best to rotate the top to bottom as well as front to back.
      But, never open the oven door for the first 60% of cooking time. This can cause the cake to sink
      So do it at the second half of cooking. For example, if the suggested cooking time is 40 mins I will do the rotations only after 25 mins
      I hope that makes sense.
