Coconut Balls – White Chocolate Truffles

These coconut balls, or white chocolate coconut truffles, make perfect edible Christmas gifts for family and friends. The white chocolate combined with coconut and cookie crumbs makes for a less sweet, and yet, delicious cookie truffle.

And, the best part is that these are vegan, eggless, and dairy-free. So, you can give them to everyone and not worry about any allergies.

Have you decided what you will serve or gift to family and friends for Christmas this year? How about some delicious truffles? These are simple and easy to make but absolutely delicious. The extra sweetness in the white chocolate is absorbed by the unsweetened desiccated coconut and gingerbread cookie crumbs which makes these coconut balls more desirable.

Ingredients and substitutes

  • White chocolate – I love using Callebaut white chocolate but you can use vegan chocolate, or diabetic chocolate too.
  • Cookies – my kids’ favorite are gingerbread-flavored digestive cookies so that’s what I am using. You can use any of your favorite cookies. I highly recommend using a cookie that is less sweet to avoid the truffles becoming too sweet.
  • Desiccated coconut – This is easily available at any supermarket these days. It soaks up into the coconut cream when chilling in the fridge. You can use freshly grated coconut as long as you store them in the fridge. You will need less fresh coconut of course.
  • Coconut cream – Fresh whipping cream is commonly used for making truffles but since coconut is the theme here I have used coconut cream. It’s thicker than coconut milk.

  • Melt – In a microwave-safe bowl or double boiler melt the white chocolate and coconut cream.
    Pro tip – use 50% power and heat at 30-second intervals to prevent burning the chocolate
  • Combine – Add the cookie crumbs, vanilla extracts, and desiccated coconut and combine well. The mixture will thicken as the coconut absorbs all moisture.
  • Chill – Cover with plastic wrap and let chill in the fridge for an hour or until firm enough to roll.
  • Shape – Take about a tablespoon amount of the chilled mixture and roll it into balls. Then roll the ball into the dry desiccated coconut.

How to make thick coconut cream?

  • Place the can of coconut cream in the fridge for a couple of hours until cold.
  • When you open the can you will find the thick coconut cream and liquid separated.
  • Gently scoop out the thick coconut cream into a separate bowl.
  • The water can be used for other uses – soups, stews, and sauces.
  • Use the thick coconut cream in the recipe below.
  • You can also whip this coconut cream with sugar until light and fluffy just like whipped cream.

Tips for Success

  • You must use thick coconut cream otherwise you will have too much liquid in the mixture which will not set. It is best to delay the process if necessary but chill the can of coconut cream and then use only the thickened coconut cream
  • Make sure the cookies are crushed to crumbs and ensure the chocolate is all melted. Pieces of chocolate or big cookie pieces will not give a smooth texture.
  • Always melt chocolate at low heat and in short bursts to prevent the chocolate from. And, make sure no water or condensation gets into the chocolate. Any one of these will situations can make the chocolate grainy or seize. Read my tips for melting and working with chocolate

How long with these truffles last?

Since these truffles do not contain dairy they will last at room temperature for 2 to 3 days which is why they make perfect gifts.

How do you store chocolate coconut truffles?

You can keep these at room temperature for 2 to 3 days but are best kept in an airtight container in the fridge for up to a week.

Can I use dark chocolate instead of white chocolate for these coconut balls?

  • 1 tsp Vanilla Extract
  • ½ cup (50 g) Cookie Crumbs
  • ¼ cup (60 g) Desiccated Coconut
