    1. The recipe card has the measurement for ganache for one cake with multiple layers.

    I want to use the ganache to fill and cover the cake. I am doing a 7 inch with 4 one inch layers and a 10 inch with 4 one inch layers. The recipe above, it it to fill and cover?

    I saw that the ratio differ between the 6 inch-7inch-8 inch etc.
    For example: ratio chocolate : whipping cream
    – for the 6 inch the ratio is 2.5 part chocolate : 1 part whipping cream
    – for the 7 inch 2.3 : 1
    – for the 8 inch 2.8 : 1
    – for the 9 inch 2.7 : 1
    – for the 10 inch 2.5 : 1
    – for the 12 inch 2.3 part chocolate : 1 part whipping cream
    Why is that? Which ratio is the good one?

    1. I like to use 2 parts chocolate and 1 part heavy cream… but 2.5 parts chocolate makes a stiffer ganache and works better for some cakes.

  6. I came across your website and it is a lifesaver! Regarding the amounts listed above “450g” chocolate for 8 inch cake… how high is this cake? I am planning an 8 inch round cake but with four layers ( so the height of the cake pictured in this post)
    Does 450g of chocolate with the 280ml of cream cover one 3 inch high 8 inch round cake?
    So to cover my taller cake I will need 900g chocolate ?

    1. Claire. It does sound like a lot of chocolate but the cake you see in the pictures does use almost 1 kg of chocolate with about 250 ml of whipping cream.
      If you see me cover a cake with ganache you will see I do use a lot of frosting in between and around the cake. So, really it’s up to how thick you want your ganache to be.

    I covered the cake with ganache n left at room temperature bt its slightly sticky
    Here its humid climate.Should I pop into fridge n then cover with fondant

    1. Yes, if you want to cover the cake with fondant make sure to chill the cake overnight so it’s nice and firm – almost hard. This will give you a. nice firm canvas to cover with fondant. Then you can thaw again at room temperature after decorating.
