Does putting the cake in the fridge between the coatings of frosting outside (I do not do it) help with the sharp edges and the way the fondant will look once on since I have trouble getting those sharp edges I like so much…and Does the fondant need to have a certain thickness in order not to break when put on? I have trouble since the fondant will break lifting it up and will stretch when trying to put it on the cake making it very hard to handle.

    1. Hey Ruth. Yes, placing the cake in the fridge between coats helps the buttercream firm so it’s easier to frost and definitely helps with sharp edges. You can see my video on sharp edges for ganache here. Sharp edges on Buttercream is also possible.
      If you roll the fondant too thin it will tear. You do need some thickness to it so you have enough to smooth and stretch.
      The best way to transfer your cake from the work surface to cake is to roll it over your fondant and then unroll it over your cake.
      Avoid the use of finger – try using the heal of your hands when smoothing fondant.

    I recently just started my own business from home and i have my first wedding order. I just wanted to know if after completing the decorations for your cake etc. with fondant and fresh flowers. Should i be wrapping my cake in fondant and keeping it in the fridge if i am delivering the next day? It will be a 2 tier cake with fondant ruffles as decoration and fresh flowers on top and on the side. Love your post it really helps me to plan out my days.

    1. Hey Ashley. Not sure I understand your question.
      Fondant can be kept on the counter for months and once on the cake, it can be kept for as long as the shelf life of the cake.
      So, there is no need to keep the cake in the fridge. A regular fondant cake be kept at room temperature for up to 3 days.

      There are exceptions to the rule, of course, such as if the cake is filled with a perishable filling such as dairy.

      1. oh my goodness i’m so sorry i meant to say should i wrap the cake in saran wrap after completing the cake and keep it in the fridge. But thank you that answer helps !

        1. I don’t usually wrap my cake because the fondant can get marks from the wrap. But I make sure I do not have any foods with strong smells. Thanks

  5. I am making a cake for my coworker’s birthday on Monday I want to bake the cake on either Saturday or Sunday morning and then frost the cake Sunday evening. It would be eaten around 1 pm on Monday. I’m using American buttercream.

    For best taste/safety, should I refrigerate the frosted cake and then take to work and leave outside of the fridge to come to room temp? Or can I just frost the cake on Sunday night and leave out at room temp?

    1. Hey Sera, You don’t need to decorate the cake at the last minute on Sunday evening. You can decorate it by Sunday morning as well.
      American buttercream can be kept out at room temperature for about 3 days so unless you are using a perishable filling such as fruit or curd you don’t need to keep it in the fridge.
      Having said that if you are going to travel with the cake, from home to the office – chilling the cake helps. A chilled cake is firm so it travels safely.

    My daughters birthday is on Tuesday. Iam planning to do party that eve. I just wanted to ask if I can complete my decorations, icings evrything by Monday night and refrigerate it and just take out before party will my cakes dry out. Iam using American buttercream frosting.this is my first time. Never done any frosting. I stay in Ireland. Not a pro just basic baker.

    1. Hey Chitra. You can definitely make the cake ready by Sunday night. In fact, you can make the cake ready by Sunday morning too.
      If you read towards the bottom of the post I have listed 10 tips that you can take to prevent your cake from drying out. Follow those and you will be fine.
