    1. Maria. You can freeze the dough after the first rise. Then, thaw in the fridge first, then at room temperature before you use it. Shape, proof and use.

    Have read Day 1 and must check the yeast in the refrigerator. I probably need to replace the yeast. Shall do so immediately… My mother was an excellent bread baker; I aspire to her greatness.
    I have no problem with pies, muffins, and cakes. Baking bread has always intimidated me. We have excellent bakeries in Toronto; it is easier to replenish supplies in my bread box. But that will
    change, hopefully..soon enough.
