This is such a great way to prepare a meal. Perfect for busy weeknights. We love chicken, and I know the grandkids would devour this in no time. This is also a great way to feed a crowd…you could do 2 pans at once.

This is the type of recipe every busy person needs whether they work from home or not. Just toss ingredients in a sheet pan plus a few veggies and aromatics, stick in the oven and just wait for the delicious aroma to fill the house. The juices from the chicken bath the rest of the ingredients so everything tastes yummy. Great recipe.

Thanks for the tip to keep the chicken tucked under the veggies to keep it moist. I never use skinless because I’m always afraid of it becoming dry. Now I’m going to try skinless chicken – Thanks love your blog

    1. You are welcome Simon. Yes, if you tuck the chicken under the veggies it will keep it from direct oven heat and the juices from the veggies will keep it moist.

I think I am the only one that hates onions – raw of caramelized but I do love the flavor of this chicken. So simple and easy recipe. I definitely wanna try this summer.

    1. No you are not the only one Eudy. I’m sure there are more. Definitely omit the onions and it will still be absolutely delicious.

We love sheet pan meals in our home mostly because we love roast chicken. I often just switch the same recipe with new veggies and the outcome is different.
