Golden Honey Mustard Chicken
This classic honey mustard chicken is as easy as it can get. The chicken is marinated with a creamy honey mustard marinade then baked until golden. The resulting juices are thick and creamy. Serve it with a bowl of hot steaming rice or good old crusty bread.
Nothing beats a good old classic recipe. Right? And there are just that many ways to play with it. Sometimes it’s best to leave the winning formula just the way it is. Like this one. I’ve eaten it for many years just this way. We licked the bowl every single time mom made it. Now my kids enjoy it to the last bit.
This recipe is really simple, easy and effortless. I mean really – Mix the marinade, toss in the chicken, bake for 45 minutes.!! Dinner is served.
Golden Honey Mustard Chicken Recipe
Let’s talk ingredients and substitute.
- Chicken – I usually always use either chicken thighs or legs. You can use breast of course. If you do reduce the cooking time by 10 minutes.
- Mustard – I use a good Dijon creamy mustard. Mustard has a strong flavor but when mixed with honey!! absolutely heavenly. So no you won’t find it too mustardy.
- Honey – Use a good quality thick honey that really brings out the flavor of the mustard.
- Soy Sauce – It’s just a tad but it helps give that little golden color you see.
- Thyme – I love the flavor or thyme with chicken and it’s not really strong so two to three sprigs are just right.
Golden Honey Mustard Chicken Recipe
Try the slow cooker?
Absolutely!! This recipe works a treat in the slow cooker. Tow things are different when done in the slow cooker – One is the color. The color is not golden but a pale mustard yellow. The resulting sauce/gravy is runnier but again we do thicken the sauce so you can add a 1 tbsp of corn flour for the last one hour. So here’s what you can do with a slow cooker.
Add the chicken and the marinade sauce in the slow cooker. Cook on low for 3 hours or on high for 2 hours. Then add one tbsp cornflour/cornstarch slurry to the sauce and cook for a further 2 hours on low. Voila!! Slow cooker Honey Mustard Chicken is done.
I love the color I get when baked in the oven. Well, it reminds me of my mom’s Honey Mustard Chicken… need I say more..?
Golden Honey Mustard Chicken
Recipe – Honey Mustard Chicken
Ingredients
- Chicken – 8 legs (or thighs)
- Flour – 1/2 tbsp
- Salt & pepper to taste
Marinade
- Dijon mustard – 1/4 cup
- Honey – 1/4 cup
- Melted butter – 1/4 cup
- Garlic – 1 clove (1 tsp minced)
- Paprika – 1/2 tsp
- Soy sauce – 1 tbsp
- Lemon juice – 1 tbsp
- Dried oregano or thyme – 1/2 tbsp
- Salt and pepper to taste
Method
- Clean remove skin, wash and pat dry the chicken pieces.
Marinate Chicken
- Add all the marinade ingredients in a bowl and stir well to combine.
- Pour over chicken.
- Coat the chicken well on all sides.
- Cover with cling wrap and let rest for a few minutes/an hour or a couple of hours in the fridge.
Cook Chicken
- Bake in a preheated oven at 200 C /400 F for about 45 minutes until nice and golden.
- The pan will have lots of sauce – which taste delicious on its own.
Make Gravy
- If you prefer a thicker gravy you could thicken the sauce.
- Carefully pour the juices in a saute pan – remove excess oil.
- Add the 1/2 tbsp flour and stir until the sauce thickens.
- Serve hot.
Serving
- This goes well with steamed rice, mashed potatoes or Whole Wheat bread.
