A perfect snack for kids or as a side dish to a meal. These ground chicken patties are simple, easy and delicious. Nothing beats adding all the ingredients into a blender, rolling into a ball and cooking them. Right? Also, this is great for freezing for kids' snack or lunch boxes.
Minced Chicken Cutlets aka Ground Chicken Patties
Having traveled a lot all over the world, the one thing I realize is that we often have the same food types, just done differently. Consequently, the basic ingredients of these chicken cutlets will remain the same. While a few additional local ingredients will make it unique to a specific country.
For example, in Russia, they add milk-soaked bread and cheese to the mince cutlets. While, in Thailand, they add some soya sauce, fish sauce, galangal etc. And in India, they add a whole lot of Indian spices such as garam masala, etc. Each and every version is incredibly tasty.
This is my version of these delicious ground chicken patties. The best part about these cutlets is that they can be put together in an instant. I find myself making them when I'm pressed for time. And kids love them too.

Ingredients and substitutes
- Chicken - Usually, I prefer chicken thighs. And yet, chicken breast also does a good job in these patties. You can use either. Just note that chicken thighs will take a minute or more to cook.
- Cilantro - This is my go-to herb at home. We love it very much. But, parsley works just as well.
- Bread soaked in milk - If you prefer not to use bread or milk, you can also use semolina. Just soak some semolina in water or milk. And it works great.
- Breadcrumbs - They add a tender crust on the outside. You can use semolina, but the crust is more crispy not as tender as breadcrumbs.
Minced Chicken Cutlets aka Ground Chicken Patties
Step by step instructions
- Soak the bread in milk - drain excess set aside.
- Add all ingredients except the dry bread crumbs into a food processor.
- Pulse a few times keep the mixture chunky but able to roll into a ball.
- Portion the mixture into ten even balls. flatten with your hands into a patty - set aside.
- Heat a skillet/fry pan with a tablespoon of oil on medium heat.
- Roll the patty into the dry breadcrumbs then place them on the hot pan.
- Cook for three minutes on one side then turn and cook on the other side for another 2 minutes.
- Test one to ensure the chicken is cooked through.
- Remove on a paper towel to absorb any excess oil.
- Serve hot with ketchup or just as is.
- Enjoy!

This is a master recipe!! It sounds delicious and I love how you can switch out the flavors and make it whatever you're in the mood for. Of course, I'd start out with a little Italian. Perhaps progress to a Tex-Mex and the Asian. Thank you for the inspiration. Kid-friendly food is what every mom and grandmother looks for. And thigh meat to me is the best.
