  1. Just read 3 diffrent Lamb curry recipes -all yours .One says you love to use red onions, next you prefer to use shallots in a slow cooker and the last sez you use brown onions. Which is your favorit? Please

    1. Fred – in the slow cooker I prefer to use shallots. They absorb moisture and cook down nicely, so there is no raw taste left behind. If I want more onions with a caramelized flavor then I use red Spanish onions because they become sweet when cooked down and almost disappear in the sauce. Brown onions are great when you want to cook onions to a translucent gravy where you want their presence felt. Hope that makes sense.

    Hi Veena, looks amazing and i will be trying it this Sunday. I want to ask a few variations:
    1 – I am going to do 1.5kg of lamb shoulder cut up
    2 – Do i have to saute the onions garlic ginger and other spices or can i throw it in the slow cooker raw and if so does it affect the flavour?

    I want it to do it as simple as possible but as tasty as possible. My main concern is suate the onion, garlic, ginger, other powders and chillies prior to adding to the slow cooker.

    1. Hey Himal. Yes, if you saute the onions, ginger, and garlic it will be more flavorful and delicious and not have that raw taste. It does not take more than 10 minutes to saute. I highly recommend you saute. You can add the powders directly to the slow cooker – no need to saute those. Let me know how it was
