    Hi Veena, thanks so much for your generosity in releasing such detailed information on cakes and fondant recipes. I really appreciate you for all of them.
    I have 2 questions. The first one is can one use water to substitute whipping cream. The second one is what can be used to substitute meringue if one can’t easily have access to it. Can it be left out completely and will one still obtain a very good – soft and pliable fondant. Thanks

      Yes, you can use water instead of cream. Though water does not so great in humidity. It tends to sweat more. Also. you will need more powdered sugar if you use water.
      You can omit the meringue. Meringue creates a crust on the fondant that helps with humidity and prevents it from sweating too much

  2. How much CMC powder should I use for this recipe? I am going to have this cake at an outdoor event, last week in May in Florida heat.

    1. I would say just 1/2 tsp per kg. You don’t want the fondant becoming hard either.

  3. Can I add lemon extract to the recipe? How would I do that?

    1. You can add lemon extract directly to the liquid ingredients or at the time of kneading the fondant.

    What brand of meringue powder do you use? I read reviews on Amazon and found quite a few differences between brands.

  5. hey, a good day can this recipe cover a 4 layer 8-inch cake?

    1. It really depends on how thick you roll the fondant, Chantel. Ideally, this batch should be enough to cover one 8 to 10 inches round with 4-inch tall cake. Hope this helps.

    1. You will need to treat the fondant with CMC or Tylose. This is edible gum that will help stiffen it up.

    I live in the UK and am really struggling to find liquid creamer at a reasonable price. I’d rather use it over fresh cream to extend the shelf life.
    Can I use powdered creamer and mix it with water to make liquid creamer? Would this work and not affect this recipe?

    1. Ruth, I have not tried powdered milk with water. My only concern would be with gelatin. I am not sure how gelatin will reacts to being cooked in powdered gelatin. By the way, you can use water instead of creamer too.

  8. I don’t have glycerin , can I substitute with something else . Also if I use heavy whipping cream for cream will fondant stay good in room temperature for 4 weeks pls advice

    1. Priya, you can use non-dairy creamer. You can omit the glycerin but you will need more kneading as glycerin keeps it softer.

  9. Is the meringue powder essential?? I cant seem to find any in my location and i dont have enough time to get it shipped online. I was wondering if i could substitute something else or just rid of it entirely??

    1. You can omit the meringue powder. But, it does help stabilize the fondant. NO need to substitute anything

  10. Can you do the steps involving the microwave on the stove?

    1. Yes, AJ, you can melt things on the double boiler too. Place a small bowl over a suacepan with simmering water. Put the ingredients in the small bowl to melt. Hope that makes sense
