    1. Hey Cecilia – the recipe card shows 1/2 tsp baking powder (not baking soda). Baking soda is often used when boiling chickpeas to make hummus or other recipes that use cooked chickpeas. In this case baking powder does a great job of making the balls light and fluffy. Thanks

    there are 2 different temperatures for deep frying in this recipe: 325 and 375. which is the correct one?

    1. Paul, for crispy falafel you need about 350F, but you may need to adjust between 350-375°F (175-190°C) to ensure it cooks without getting too dark. I hope that makes sense.
      Don’t go below 350F, as that can cause them to soak up oil.

    Dear One, I AM noticing that the recipe calls for 1 ONE TBLS of flour however in the YouTube video it appears that a quarter cup of flour is being added!! This seems to be consistently misrepresented in every Falafel recipe I have tried. The video proves that the recipe is not listing the correct amount of flour as does the recipe. I AM pointing this out because I AM exhausted over these miscalculations. Therefore my Falafels always fall apart. Now I know why!! Thanks for the video allowing me to capture this inconsistency.

    1. The flour usually will depend on the way you grind the falafel and other ingredients. A fine ground may be good enough. Too much moisture in the ingredients will need more flour. So yes, it may look like some recipes need more and some will need less.

        First I want to express my gratitude for replying to my comment ?? I truly love that perfectly crispy yet moist falafel!!! What I am discovering is how well I dry the rehydrated chickpeas before I place them in the food processor has a big impact on the moisture retention. Your video was a big eye opener for me!! I’m a well seasoned cook who uses all my senses and still I couldn’t seem to arrive at the perfect consistency. I chose to make patties and pan fry mine in about an Inch & half of oil at 350 degrees for 3 minutes total & they turned out fantastically delicious ?Your video was very helpful! ??
