    I’d like to make these ahead of time as finger food for a party. I was thinking of marinating the chicken for a couple of hours, threading it on the skewers and freezing it (raw). Then cook the sauce and freeze it readily cooked. On the day of the party, I’d thaw the sauce, grill the chicken, brush the sauce over it, and refrigerate till serving time. Then reheat everything just before serving.
    Do you think it will work for me please?

    1. Yes, Christine. That sounds like a great plan. Use a whisk to ensure your sauce is smooth again.

    Our whole family loves Thai food! We like the spice and the herbs that’s used. And, frankly, I’m with you when it comes to take out. We love cooking so it isn’t a chore for us to spend time in the kitchen. We know exactly what we put in the food. Now, you’ve got little ones at home plus a cake business — that takes a lot of time. The chicken skewers are so cute I bet they make fantastic appetizers.
