The problem with traditional mashed potatoes lies in their high-calorie and fat content. While undeniably delicious, these creamy concoctions often leave us feeling weighed down and guilty. But who wants to sacrifice flavor for a healthier option? That’s where Skinny Mashed Potatoes come in. By making a few simple adjustments to the classic recipe, you can enjoy the same velvety texture and rich taste while significantly reducing calories. So let’s dive into why this is the best recipe for guilt-free indulgence.
Why is this the best recipe?
- One of the key reasons our recipe stands out is that it delivers on taste without compromising health. Using a clever combination of ingredients and techniques, we’ve created mashed potatoes that are just as satisfying as traditional versions, but with fewer calories. You won’t believe how creamy and delicious these skinny mashed potatoes turn out!
- But what truly makes our recipe the best is the attention to detail we’ve put into every step. We start with selecting the right type of potatoes, opting for those with a higher starch content, which ensures a smoother texture. Then, we meticulously boil them until they’re fork-tender, ensuring they’re cooked perfectly for mashing.
- But we don’t stop there. We’ve mastered incorporating just the right amount of low-fat dairy products and seasonings to keep the mashed potatoes light and fluffy. We impart incredible flavors without piling on unnecessary calories by adding low-fat milk, a dollop of Greek yogurt, or even a hint of garlic.
- Additionally, our recipe emphasizes the importance of proper mashing techniques. From using a potato masher to achieve the desired consistency to adding just the right amount of milk, Greek yogurt, and butter, every step is meticulously crafted to ensure an indulgent and guilt-free experience.
Ingredients and substitutes
- Instead of traditional russet potatoes, this recipe uses Yukon Gold potatoes. These yellow-fleshed potatoes are naturally buttery and creamy, resulting in a velvety smooth texture that doesn’t require excessive amounts of butter or cream.
- This recipe replaces heavy cream with low-fat milk to further reduce calories without sacrificing flavor. The milk adds the right amount of creaminess while keeping the mashed potatoes light and airy. For a dairy-free alternative, you can use unsweetened almond milk or coconut milk, which lend their subtle flavors to the dish.
- Another secret ingredient in these guilt-free mashed potatoes is Greek yogurt. It adds a tangy richness and a boost of protein, making the dish more satisfying and nutritious. Greek yogurt also contributes to the creamy texture, ensuring your mashed potatoes are velvety and decadent.
- Garlic powder is used to infuse these potatoes with flavor rather than excessive amounts of salt or butter. The garlic lends a robust and aromatic quality to the dish, elevating the taste without adding unnecessary calories. For those who prefer a milder garlic flavor, roasted garlic can be used as a substitute, adding a sweet and nutty essence.
- For added flavor, sprinkle fresh herbs like chives or parsley to add freshness and color. These herbs enhance the overall presentation and add a subtle flavor that perfectly complements the creamy potatoes.
Step-by-step: Skinny mashed potatoes
- Start by scrubbing the potatoes thoroughly and cutting them into small, evenly sized chunks.
Pro tip – Leaving the skins on adds extra fiber, nutrients, and a rustic touch to the final dish.
- Place the potato chunks into a large pot, fill it with enough cold water to cover them, and add a pinch of salt. Bring the water to a boil over medium-high heat, then reduce the heat and simmer for 15-20 minutes, or until the potatoes are tender enough to pierce with a fork.
- While the potatoes are cooking, heat the milk and butter. This warm mixture will make incorporating them into the mashed potatoes much easier later on.
- Drain them well once the potatoes are cooked and return them to the pot. Use a potato ricer or a handheld mixer to mash the potatoes until they reach your desired consistency.
Pro tip – You can use a low-speed mixer for smoother mashed potatoes, but be careful not to overmix, as it can make them gluey.
- Gradually pour in the warm milk, a little at a time, while mashing the potatoes. Gradually adding the mixture will help you control the texture and creaminess of the mashed potatoes. Next, add the sour cream and season with garlic powder, salt, and pepper to taste. Keep in mind that you can always adjust the seasoning later.
- Transfer the mashed potatoes to a serving dish and sprinkle them with fresh herbs, such as chives or parsley, to add freshness and color. These herbs enhance the overall presentation and add a subtle flavor that perfectly complements the creamy potatoes.
Frequently asked questions
Usually, it lasts about 3 to 5 days in the fridge.
There are several options for creating a healthier base for your mashed potatoes. Cauliflower is a popular choice, offering a similar texture and taste to potatoes but with fewer calories and carbs. Sweet potatoes and turnips are also excellent alternatives, adding a hint of sweetness and unique flavors to your dish. Experiment with different bases to find your favorite.
Absolutely! While butter and cream are often used to achieve that velvety texture in traditional mashed potatoes, there are many substitutes available. Greek yogurt or sour cream can provide a tangy and creamy element, while unsweetened almond milk or vegetable broth can add moisture without the extra calories. You can also try using a small amount of olive oil or coconut oil for a healthier fat option.
The options for mix-ins are endless when it comes to skinny mashed potatoes. Consider adding roasted garlic for a touch of savory sweetness or caramelized onions for a flavorful twist. Cheese lovers can experiment with grated Parmesan or sharp cheddar to add some tanginess. You can even include sautéed mushrooms, cooked spinach, or roasted bell peppers for added depth and nutrition.
Generally, it happens when you do not drain all the liquid from the mashed potatoes well. Place the pot on low heat and stir gently as the excess moisture evaporates. Do not stir vigorously, as it will make the potatoes starchy and sticky.
Using the wrong kind of potato (such as waxy red potatoes), excess liquid in the potatoes, or too vigorous mixing can make the potatoes very sticky, gluey, or gummy.
I love using Yukon Golds because they mash up light and absorb many flavors. Thick-skinned potatoes like russets make lovely, fluffy mashed potatoes as well. Avoid waxy red-skinned potatoes – these make gluey, gummy mashed potatoes.

Notes
- Start with the Right Potatoes: The foundation of any mashed potato dish is the type of potatoes you choose. Opt for starchy potatoes like Russets or Yukon Golds for a creamy and smooth texture. These varieties have a higher starch content, which allows them to break down easily when cooked and yield fluffier mashed potatoes.
- Don’t Skip the Peeling: While leaving the skin on can be a time-saver and add nutritional value, take the extra step of peeling the potatoes for the ultimate silky-smooth mash. This will ensure a velvety consistency that melts in your mouth.
- Cook with Care: To achieve that perfect tenderness in your potatoes, cook them just right. Start by cutting them into evenly sized chunks to ensure even cooking. Boil the potatoes in salted water until they are fork-tender, but not so soft that they fall apart. Overcooking can lead to soggy potatoes and a gummy texture.
- Embrace the Power of Dairy Alternatives: To keep your mashed potatoes guilt-free and light, consider using low-fat dairy alternatives such as skim milk or Greek yogurt. These options still bring the creamy factor while reducing the overall fat content. Experiment with different quantities to find the perfect balance between creaminess and health-consciousness.
- Season to Perfection: While salt and pepper are standard seasonings for mashed potatoes, don’t be afraid to get creative. Add minced garlic, chopped herbs like chives or parsley, or grated Parmesan for extra flavor. Remember to taste and adjust as you go, ensuring a well-balanced and delicious result.
- Mindful Mashing: The mashing technique is the key to achieving the right texture for your mashed potatoes. Start by draining the cooked potatoes well to remove excess moisture. Then, gently mash the potatoes until smooth and creamy using a potato masher or a fork. Avoid over-mashing, as it can lead to a sticky and glue-like consistency.
Customization
- First, let’s talk about the base of your mashed potatoes. While we’ve already shared a basic recipe, don’t be afraid to switch things up. Instead of using regular white potatoes, try sweet potatoes, cauliflower, or a combination of different root vegetables. Each variation will bring a unique taste and texture to your mashed potatoes, creating a delightful twist to a classic dish.
- Now, let’s add some extra flavor to your mashed potatoes. To enhance the taste, consider incorporating herbs and spices into your recipe. Chopped fresh herbs like rosemary, thyme, or chives can elevate the flavors and add a refreshing aromatic touch. Add a pinch of garlic powder, paprika, or even a dash of hot sauce for a subtle kick. These small additions can make a big difference in transforming your mashed potatoes into a sensational culinary experience.
- Texture is another element you can play with when customizing your mashed potatoes. If you prefer a smoother consistency, use a potato masher or blender to achieve a velvety texture. For a chunkier texture, leave some small pieces of potato intact or use a fork to mash the potatoes gently. Experiment with different textures to find your personal preference and create a mashed potato experience that suits your taste buds.
- Finally, consider adding mix-ins to your mashed potatoes for a delightful twist. Creamy cheese, like sharp cheddar or grated Parmesan, can add richness and depth to your dish. Bacon bits, sautéed onions, or caramelized shallots can bring a savory element, and roasted garlic or sun-dried tomatoes can offer unique bursts of flavor. Don’t be afraid to get creative and try different combinations – the options are endless!
