Why is this the best recipe?
- Versatility of Berries: This recipe uses a combination of berries, allowing you to use whatever is in season. In addition, the mix of blueberries, raspberries, strawberries, and blackberries creates a vibrant and flavorful filling that appeals to a wide range of tastes.
- Perfect Balance of Sweetness and Tartness: The lemon juice and balanced sugar content in the berry filling provide a perfect harmony of sweet and tart flavors. This balance ensures the cobbler is not overly sweet and has a refreshing tang.
- Buttermilk Cobbler Topping: The cobbler topping is made with buttermilk, which adds a slight tanginess and makes the topping tender and moist. The combination of granulated and brown sugars in the topping adds depth of flavor and a hint of caramel.
- Ease of Preparation: The recipe is straightforward and easy to follow, even for beginner bakers. And with these simple ingredients and clear instructions, you can have a delicious homemade dessert without much fuss.

Ingredients and substitutes
- Mixed Berries: Provide the main flavor and texture for the cobbler filling. You can use any combination of fresh or frozen berries, such as blueberries, raspberries, strawberries, blackberries, or even cherries or peaches.
- Granulated Sugar: Sweetens the berry filling. You can also use brown sugar, coconut sugar, or honey, adjusting to taste.
- Cornstarch: Thickens the berry filling, preventing it from being too runny. You can also use arrowroot powder or tapioca starch as substitutes, in equal amounts.
- Lemon Juice: Adds acidity to balance the sweetness and enhance the berry flavors. You can also use lime juice or a small amount of apple cider vinegar.
- Vanilla Extract: Adds a rich, sweet flavor to the filling. You can also use almond extract as a substitute or omit it if you prefer a more straightforward berry taste.
- All-Purpose Flour: Forms the base of the cobbler topping. You can also use whole wheat flour, gluten-free all-purpose flour, or almond flour (for a gluten-free option).
- Granulated Sugar: Sweetens the topping. You can also use brown sugar, coconut sugar, or any granulated sugar alternative as a substitute.
- Unsalted Butter: Provides richness and helps create a tender, flaky topping. You can also use margarine, vegan butter, or chilled coconut oil.
- Buttermilk: Adds moisture and a slight tang to the topping. However, you can substitute it with milk mixed with 1/2 tablespoon of lemon juice or vinegar (let it sit for 5 minutes) or plain yogurt thinned with a little water.

Step-by-step: Mixed Berry Cobbler
- Preheat the Oven: Preheat your oven to 375°F /190°C/ Gas mark 5. Grease a 9 x 13-inch baking dish or a 9-inch pie baking dish.
- Prepare the Berry Filling: In a large mixing bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to coat the berries evenly. Then, pour the berry mixture into the prepared baking dish and spread it out evenly.

- Make the Cobbler Topping: In a medium mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Next, add the buttermilk, melted butter, and vanilla extract. Combine well until you have a smooth batter.
- Assemble the Cobbler: Drop spoonfuls of the cobbler topping over the berry filling. It’s okay if some berries are still visible; the topping will spread as it bakes. Sprinkle a few almond flakes over the top for a slight crunch.

- Bake the Cobbler: Place the cobbler in the oven and bake for 40-45 minutes, or until the topping is golden brown and the berry filling is bubbly. If the topping is browning too quickly, you can loosely cover the cobbler with aluminum foil halfway through baking.

- Cool and Serve: Allow the cobbler to cool for at least 15 minutes before serving. This will help the filling to set a bit. Serve the cobbler warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.

Notes
- Fresh or frozen fruit both work well. If using frozen fruit, add it straight from the freezer without thawing.
- Taste the fruit before baking and adjust the sugar slightly depending on how sweet or tart it is.

- Bake the cobbler on a baking sheet to catch any bubbling juices.
- Store leftovers covered in the refrigerator for up to 4 days.
- Reheat individual servings in the microwave or warm the whole cobbler in a 325°F (160°C) oven until heated through.
- Freeze the baked cobbler for up to 3 months. Thaw overnight in the refrigerator before reheating.

- Use ripe, flavorful fruit for the best taste. If using frozen fruit, do not thaw it first.
- Don’t overmix the biscuit topping. Stir just until combined to keep it light and tender.
- Leave small pockets of butter in the topping—they create a flaky, golden crust.
- If the fruit is especially juicy, add an extra teaspoon of cornstarch to help thicken the filling.
- Bake until the topping is deeply golden and the fruit is bubbling around the edges. Bubbling juices mean the filling has thickened properly.
- Let the cobbler rest for at least 15–20 minutes before serving so the filling has time to set.
