Instructions
Preheat the Oven: Preheat your oven to 375°F /190°C/ Gas mark 5. Grease a 9 x 13-inch baking dish or a 9-inch pie baking dish.
Prepare the Berry Filling: In a large mixing bowl, combine the mixed berries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Gently toss to coat the berries evenly. Pour the berry mixture into the prepared baking dish and spread it out evenly.
Make the Cobbler Topping: In a medium mixing bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, and salt. Add the buttermilk, melted butter, and vanilla extract. Combine well until you have a smooth batter.
1 cup All-purpose flour, 1 tsp Baking powder, ½ tsp Salt, ¾ cup Granulated sugar, ¾ cup Buttermilk, ¼ cup Melted butter, 1 tsp Vanilla extract, 1 Zest of lemon , 1 Zest of orange
Assemble the Cobbler: Drop spoonfuls of the cobbler topping over the berry filling. It's okay if some berries are still visible; the topping will spread as it bakes. Sprinkle a few almond flakes over the top a slight crunch.
2 tbsp Almond flakes
Bake the Cobbler: Place the cobbler in the oven and bake for 40-45 minutes, or until the topping is golden brown and the berry filling is bubbly. If the topping is browning too quickly, you can loosely cover the cobbler with aluminum foil halfway through baking.
Cool and Serve: Allow the cobbler to cool for at least 15 minutes before serving. This will help the filling to set a bit. Serve the cobbler warm, optionally with a scoop of vanilla ice cream or a dollop of whipped cream.
