Ingredients and substitutes
- Strawberries – When choosing strawberries, it’s important to look for ones that are plump, firm, and bright red in color.
- Avoid mushy strawberries that have bruises or are a dull color, as they may be overripe or spoiled. Of course, you can also use other berries, such as raspberries, blackberries, blueberries, or a combination of them.
- Another essential factor to consider is the fragrance of the strawberries. The best strawberries have a sweet and fragrant aroma that is noticeable before you pick them up. If they don’t have any smell, they may be underripe and lacking in flavor.
- Cream cheese – I am using full-fat 38% mascarpone or Philadelphia cream cheese. While the gelatin will set the low-fat cream cheese, I highly recommend no less than 32% fat for richness.
- Heavy cream – Use high-fat whipping cream, no less than 38% fat. Otherwise, the mousse will not set.
- Sugar – I use white sugar in the cake and filling, but powdered sugar in the mousse. The powdered sugar helps stabilize the heavy cream in the mousse.

Step-by-step: Strawberry Dessert slice
The strawberry cake
- Dry ingredients – Combine the all-purpose flour, baking powder, baking soda, and salt in a medium bowl. Set aside.
- Wet ingredients – Whip the eggs with sugar until light and foamy. Then, gradually, add the oil, followed by the strawberry puree and food color.
- Combine – Add the dry ingredients to the wet ingredients and combine well.
- Bake – Pour the batter into a lined 8 x 8-inch square cake ring or loose-bottom square cake pan. Bake for 25 to 30 minutes until a skewer inserted in the center comes out clean.
- Cool – When baked, cool the cake in the pan completely while you prepare the mousse.
Pro tip – The cake must be cooled well. Otherwise, the mousse will melt and not set properly.

Mousse and Filling
- Strawberry Mousse – In the bowl of a stand mixer with the whisk attachment, cream the cream cheese and powdered sugar. Then, add the heavy cream and whip until light and fluffy. Next, add the strawberry puree and combine well.

- Strawberry filling – In a saucepan, combine the cornstarch and water. Then, add the strawberry slices and sugar. Simmer over medium heat until thickened. Set aside to cool completely.

Assemble
- Pour the strawberry mousse over the cooled strawberry cake and spread to level. Chill in the fridge for at least 3 hours. Then, pour the cooled strawberry filling over the top. Swirl the pan to ensure an even spread. Chill in the fridge for at least 2 hours.
- Decorate – You can decorate the whole cake with a sliced fresh strawberry. Or, you can cut the cake into 8 pieces/slices and top each with a slice of strawberry.

- ¾ tsp Baking powder
- ½ tsp Baking soda
- ¼ tsp Salt
- 2 large Eggs
- ¾ cup White sugar
- 60 ml (0.25 cups) Cooking oil
- 60 ml (0.25 cups) Strawberry puree (about 10 strawberries – preferably reduced)
- ¼ tsp Pink food color
- 1 cup Cream cheese 38 – 40%
- ½ cup Heavy cream 38%
- ⅓ cup Powdered sugar
- ½ cup Strawberry puree (about 8 strawberries)
- 1 cup Strawberry slices (about 8 strawberries)
- ¼ cup White granulated sugar
- 1 cup Water
- 1 tbsp Cornstarch or tapioca starch
Method
