    Hello! Do these freeze well? I was going to use the pudding method for an ice cream cake but wasn’t sure if it was ok to freeze.

    1. Its gelatin and can be frozen but I have not tried freezing stablized whipped cream.

  3. Hi there, I want to try to make, stabilized coconut whip cream for pavlova cakes. Would any of these methods work to stabilize it? Note, I’m using the hard portion from a can of coconut milk.

    1. El, why do you want to stabilize coconut cream? It has a better shelflife than whipping cream. You should be able to stabilize it but I have not tried it so can’t troubleshoot. Thanks

  4. Also, can I used powdered sugar instead of caster sugar for the gelatin method?

    That is, if I plan on using whipped cream instead of frosting.

    Does the gelatin give the whipped cream a different consistency?

    1. No, it just holds the whipped texture a bit longer. You don’t always have to stabilize whipped cream unless you plan to keep it for longer in the fridge.

  6. With the corn starch starch recipe I will need more frosting. You say not to add more corn starch. If I need to double or triple the recipe do I follow it to a tee or stick with the 1 Tbsp. Corn starch?

    1. If you double the recipe then double everything! Some people think if they add more cornstarch the whipped cream will get more stiffer. It doesn’t! Hence the statemnet. Hope that makes sense.

I did the stabilizing with gelatin, followed the instruction to bloom, dissolve and temper the gelatin before added into the soft peaked whipped cream, it all looked fine, but after I put the cream in the fridge, I noticed there were little lumps when I started frosting. Does it mean it’s not stabilized at all? How do I fix it?

    1. Sounds like the gelatin did not get well incorporated in the whipping cream Dorothy. Or maybe you ove-whipped it after the gelatin was added. You can still use it.
