    1. You can use water instead of milk, but milk makes it richer, which is what brioche is all about!

  1. I have made this recipe twice now, followed to a tee, and my dough does not rise or double. Not sure what I am doing wrong.

    1. Sorry to hear that Lori. There is a lot of sourdough in this recipe and many hours so the buns must rise. May be your sourdough needs more time. Perhaps proof at room temperature first, then let them proof in the fridge for a longer time. Hope this helps.

    1. Christina the current measurements are correct – the recipe has been edited and measurements of flour and milk have been adjusted accordingly

    After the bulk ferment in the refrigerator, my dough looks the same as when I put it in. Is it supposed to double in size prior to shaping? Thanks for your time!

    1. Yes, it should rise even in the fridge! But if it does not – leave it outside until it doubles in size. Then proceed

    This dough was an absolute dream. I used my stand mixture, and then dumped it into a bulk container to ferment. Never refrigerated it. Doubled in 4 hours, shaped tge buns and let them rise for 2 1/2 hours. Gorgeous!

    These are absolutely delicious! The whole family was impressed that I made my own buns. Pretty sure they ate them for dessert too, because there aren’t any left this morning.

    Great to know I can use my sourdough to make brioche! I had been using it only to make loaves. I really liked how my buns turned out!
