Dive into a perfect salmon poke bowl bursting with freshness. Tender, marinated salmon meets an array of colorful vegetables, creamy avocado, and tangy sauces atop a bed of fluffy rice or nutritious greens. Whether you’re craving a healthy lunch or a satisfying dinner, this bowl promises a deliciously satisfying meal that’s as beautiful as flavorful.

A few summers back, I treated my kids to a delightful dining experience at a charming restaurant. Knowing their love for fish and seafood, we indulged in several dishes, including a refreshing poke bowl. It was Rhea’s first encounter with this Hawaiian delight, and to my surprise, she dug in eagerly, her bowl disappearing within minutes. This newfound enthusiasm sparked a tradition in our household, with poke bowls becoming a regular feature on our menu.
Originating from Hawaii, a poke bowl traditionally consists of cubed raw fish, usually tuna or salmon, marinated in a soy-based sauce and served over rice. The word “poke” means “to slice or cut” in Hawaiian, referring to how the fish is prepared. However, in recent years, poke bowls have evolved into a versatile dish with endless variations.
Why make this poke bowl?
- First and foremost, the star of this poke bowl is the salmon. Its buttery richness pairs perfectly with the tangy and savory elements of the marinade, creating a symphony of taste that is simply irresistible.
- Speaking of the marinade, it is the key to infusing the salmon with an explosion of flavors. Carefully crafted with a combination of soy sauce, sesame oil, ginger, garlic, and a hint of sweetness, the marinade enhances the salmon’s natural flavors and also adds complexity and depth to each bite.
- Now, let’s talk about the poke sauce. This recipe takes the traditional elements of poke sauce and elevates them to new heights. With a mayo and rice vinegar base, this sauce incorporates a carefully selected blend of spices and seasonings.
- Finally, all these elements come together in the final presentation of the poke bowl. The vibrant colors of the fresh ingredients, the glistening pink of the salmon, and the delicate drizzle of the poke sauce create a feast for the eyes.

Ingredients and substitutes
- First and foremost, the star of the dish is the salmon. To achieve the perfect poke bowl, it’s crucial to use high-quality salmon. Look for fresh, sushi-grade salmon that is firm to the touch with a vibrant pink color. And if you cannot find fresh salmon, frozen salmon can be a suitable substitute. Just make sure to thaw it properly before using it.
- Next, let’s talk about the poke marinade. This crucial component infuses the salmon with flavor and helps tenderize it. The traditional poke marinade consists of soy sauce, sesame oil, rice vinegar, and a sweetness from mirin, or either honey or sugar. However, you can always experiment and customize the marinade to your taste. For example, add a dash of chili sauce for some heat or a squeeze of citrus juice for a refreshing twist.
- Moving on to the poke sauce, this brings all the flavors together and adds that perfect finishing touch to your poke bowl. The classic poke sauce includes mayonnaise, sesame oil, and a hint of sriracha for a kick. However, you can modify the sauce based on your preferences. Add a spoonful of miso paste for a richer umami flavor or some chopped scallions for freshness.
- If you’re looking for substitutes for any of these ingredients, there are a few options. For the salmon, you can try using tuna or another type of fish, like snapper or yellowtail. Remember that the flavor and texture may vary slightly, but still result in a delicious bowl. As for the marinade and sauce, you can experiment with different condiments and spices to create your unique flavors. For example, tamari or coconut aminos can be used instead of soy sauce, and tahini can substitute for sesame oil.

Step-by-step: Salmon poke bowl recipe
- Rice – In a large bowl, wash the rice in clean running water a couple of times until the water runs clear. Then, cook according to the package directions. And set aside.
Pro tip – Generally, you would add 1 cup of water and 1 cup of rice to a pot. Let it come to a boil. Then, turn the heat to a low simmer and cook for 15 minutes. And set aside until ready to serve.

- First, prepare your salmon. Begin by cutting the fish into bite-sized cubes, ensuring they are all relatively uniform. This will ensure even cooking and a consistent texture throughout your poke bowl.
- Next, it’s time to marinate the salmon. In a bowl, combine all the marinade ingredients. This marinade will help infuse the fish with a delicious umami flavor. If you want to experiment, consider using tamari or coconut aminos as substitutes for soy sauce and tahini instead of sesame oil.
- Place the salmon cubes into the marinade, ensuring each piece is well-coated. Cover with plastic wrap and marinate in the refrigerator for 10 to 15 minutes. Before serving, add the chili flakes and sesame seeds.
Pro tip – I like to add the chili flakes and sesame seeds shortly before serving. This way, the chill does not overpower in flavor, and the sesame seeds don’t soak up the soy sauce. - While the salmon marinates, it’s time to prepare the rest of the ingredients for your poke bowl. Dice a ripe avocado into small cubes, slice some fresh cucumbers, and chop up scallions for added crunch and freshness. You can also add sesame seeds, seaweed, or any other toppings you desire to enhance the overall taste and presentation.

- Combine all the poke sauce ingredients in a bowl with a whisk- mayo, rice vinegar, chili, and sesame oil.
Pro tip – The color of your sauce will depend on the color of the sesame oil and the amount of chili oil you use. - Once everything is prepped, it’s time to assemble your salmon poke bowl. Start by placing a bed of sushi rice or mixed greens in a bowl. Then, arrange the marinated salmon on top or side, followed by the other vegetables. Today, I am using cucumber, avocado, carrots, broccoli, and lettuce or veggies. Feel free to get creative with the arrangement and add any additional toppings you desire.
Pro tip – You can also serve this a la carte and let people make their own salmon poke bowl with the combination they like. - Finally, drizzle your desired sauce over the top of your poke bowl. You can add a touch of Sriracha or chili flakes for some added heat.

We like to serve a salmon poke over steamed sushi rice. Often, I opt to eat mine with salad for a lighter meal.

Frequently asked questions
Raw fish (salmon or tuna) marinated in Asian sauces such as soy, mirin, and sesame. It is served over a bowl of steamed Asian starch such as Jasmine rice or Sushi rice, along with fresh seasonal raw or sauteed veggies.
Leftovers can be stored in an airtight container in the refrigerator for up to two days. However, it’s important to note that the fish’s quality may deteriorate after the first day. So it’s best to consume it as soon as possible. Additionally, if you have any leftover sauces or toppings, store them separately to maintain their freshness and prevent them from getting soggy.
Absolutely! Using frozen salmon is a great option, especially if you can’t find fresh salmon or if you’d like to save time. Just make sure to thaw the salmon properly before preparing your poke bowl. Then, place it in the refrigerator overnight or thaw it in cold water for quicker results. Once it’s fully thawed, you can marinate and season it according to your preferences.
Certainly! If you prefer not to eat raw fish or want to explore different flavors, there are plenty of alternatives for your poke bowl. Some popular options include using cooked shrimp, octopus, tofu, or even chicken. You can marinate and season these alternatives just like raw fish, creating a delicious and satisfying bowl without the raw seafood element.
Absolutely! Planning and prepping the components of your poke bowl in advance can save you time and make the serving process smoother. You can prepare the rice, chop the vegetables, and marinate the fish a few hours or even a day ahead. However, adding the toppings and sauces just before serving is best to ensure maximum freshness and flavor.

Notes
- First and foremost, freshness is key. When you’re purchasing your salmon, look for fillets that are firm, glistening, and have a mild, oceanic aroma. This will guarantee that your poke bowl will have that delightful burst of flavor you’re after.
- Before you start preparing your salmon, it’s essential to ensure it’s properly thawed. If you’re using frozen fillets, allow them to defrost in the refrigerator overnight. This gentle thawing method will preserve the texture and flavor of the fish, resulting in a more succulent poke bowl.
- When it comes to slicing your salmon, aim for uniform pieces that are bite-sized. This will ensure that every mouthful is a harmonious blend of flavors and textures. If you’re new to slicing fish, don’t worry! Take your time, use a sharp knife, and remember that practice makes perfect.
- As you assemble your poke bowl, take a moment to consider the overall composition and balance of flavors. Add a variety of fresh vegetables, such as cucumbers, radishes, or edamame, to provide crunch and pops of color. Remember to incorporate some acidity with citrus fruits like lime or lemon to balance out the richness of the salmon.
- Finally, drizzle your desired sauce over the top of your poke bowl. You can use the remaining marinade or create a separate sauce using ingredients like soy sauce, lime juice, and a touch of Sriracha for some added heat. This final touch will tie all the flavors together and elevate your salmon poke bowl to new heights.
