  1. Does the recipe call for applying both the dry rub and the marinade, or is it one or the other but not both?

    1. JRP – just as the recipe says, marinate with the dry rub, then the wet marinade. Then roast.

    I like that your roasted the lamb with wine and herbs. I always thought we can cook lamb only with spices .But this recipe changed my opinion. Delicious.

      Truly a 5-star recipe. Never made lamb before, and after perusing a several recipes, landed on this one and made it for Christmas. Your tips and detailed instructions were so helpful – especially for a noob like me! I read and reread them 20x and watched the video over and over. Hunting down the ras al hanout was an adventure in itself, and I’m so glad I found it. During cooking, the whole house smelled amazingly of lemony-garlicky-herbs and roasted meat. The final product – an herb-crusted golden-roasted lamb leg – was incredibly tender, and fall off the bone. In fact, a spoon is sufficient to shred the meat, if desired. The lamb bursts with flavour and every morsel is a dance of delight on the palate. Worth the effort and time investment. Highly recommend!
