      For my traditional fruit cake, I use a simple homemade mixed spice. You can adjust it to taste, but this is a great all-round blend:

      Fruit Cake Spice Mix

      2 tsp ground cinnamon

      1 tsp ground nutmeg

      1 tsp ground allspice

      ½ tsp ground cloves

      ½ tsp ground ginger

      Mix everything well and store in an airtight jar. I usually use about 1½–2 teaspoons of this mix per fruit cake, depending on how spiced I want it.

      Your own version will work too — fruit cake spices are very forgiving, so trust your taste 😊

  3. Isn’t there baking powder and soda included in this?

    1. Hey Elda. Traditional fruit cakes are dense because they have lots of fruits in them, in fact, more fruit and nuts than flour! So even if you added any leavening it would not help raise the cake. These cakes were made with alcohol as a preservative and were kept for over a few weeks at room temperature.
      Try this recipe for fruitcake – it is a lighter version. It’s rich and moist and also has baking powder and baking soda.

        1. Yes, Elda. Fruitcakes don’t have baking powder or baking soda. They are usually dense loaded with fruit!!

    I want to make my fruit cake alcohol free. Do you “feed” the cake with orange juice line you do with alcohol?

    1. No Dee, if you make a fruit cake alcohol-free with orange juice you need to make it fresh and eat it within the first week. Orange juice unlike alcohol reduces the shelflife of the cake. I hope that makes sense. Thanks

  5. Where are the nuts? I see ground almond flour, but in the picture, there are distinctly large pieces of nuts in the cake and even more on top. The recipe does not seem to be complete. I prefer walnuts over almonds, how much am I supposed to add?

    1. Gregory. There are 1/2 cup nuts. You can use any or a combination of a few in the cake. The top is with sliced almonds but you can switch that too.

        Hi Veena, had one question, I mostly read that Christmas cakes need to be fed with alcohol, but is it absolutely essential to feed a cake if I make it and have it within a few days. This is the first time I am baking one, wanted to know if there would be any difference in taste of a freshly baked fruit cake and a matured one with feeding of rum. Thank you in advance

        1. Hey NK. Absolutely not! I love fresh cakes. I don’t always have my mother’s patience to feed fruitcakes. I do it sometimes but not with every cake. I love the taste of fresh cakes.

  7. Hi, Veena. Thank you for sharing your recipe. Can I use Gordon’s Royal Gin to soak the mixed fruits. While feeding the cake later, I will use VSOP brandy.
