    Hi Veena,

    I'm glad I stumbled on your website. The other day I tried one of your chocolate cakes and it came out soooo soft and good.

    Well, I'm planning to make this rich fruit cake. Unfortunately Im unable to find "Mixed Spice" in any of the stores nearby. Could you suggest an alternative or is possible to home make it.

    I want to make a fruit cake without alcohol for my mums 60th on Saturday, what could u substitute the rum with, I heard orange juice is good. Im making a book cake, do you have any tips on how to decorate, is covering with mazipan before sugarpaste icing. Any tips will be greatly appreciated. Thanks in advance.

      Yes, orange juice is a great substitute. You could also add milk too. I have a video that shows how to do an open book cake. Check out the page that says Tutorials-Videos or go to my you tube channel.
      Fruit cake with Marzipan and then sugar paste is a good way to decorate. You can buy sugar paste and Marzipan ready made or make at home. Check out my recipe of sugar

    Thanks so much for this recipe. Made the cake today with the tips you gave. Adding flour to the fruits and putting the fruits in the batter last. The fruits were well spread in the cake unlike before when the fruits would be found at the bottom of the cake. I also put the cake in a pan of water and used parchment paper to prevent the top from becoming too brown.I wondered about the quantity of

    Please could you explain what you mean by adding a few tablespoons of flour to the fruits? Also are you referring to soaked fruits and how do you prevent unsoaked fruits if that is what you prefer from sinking. Thank you

    1. Adding flour to the fruit will prevent the fruit from sinking to the bottom of the pan.
      As I mentioned in the post If you have soaked the fruit in alcohol drain the fruit from the alcohol completely, place in a bowl and add the flour.
      If you do not soak the fruit you still need to add the flour; so the flour will act as a glue between the fruit and the batter hanging on to the batter

    My mom use to do the same thing with soaking the fruits. She passed away and so don't have her recipe, but now I have yours. Oh I'm so excited.
    I will make this recipe but in March for my wedding anniversary.
