Why is this the best recipe?
- Balanced Flavors: The combination of zucchini, carrots, onions, and garlic creates a harmonious blend of flavors. The coriander powder adds a subtle hint of spice, making each bite deliciously complex.
- Perfect Texture: The fritters are crispy on the outside and tender on the inside. Squeezing out the excess moisture from the vegetables ensures they fry up perfectly without becoming soggy.
- Nutrient-Rich: Packed with vegetables, these fritters are not only tasty but also nutritious. Zucchini and carrots are rich in vitamins and minerals, making this a healthy snack or side dish.
- Versatile and Easy: This recipe is straightforward and quick to prepare. Plus, it’s versatile—you can easily add other ingredients like herbs or cheese to customize the fritters to your taste.
Ingredients and substitutes
- Zucchini: Adds moisture, mild flavor, and a tender texture to the fritters. You can use yellow squash or grated potatoes as an alternative. If using potatoes, make sure to squeeze out the excess moisture.
- Carrots: Provide sweetness, color, and a slight crunch. Sweet potatoes or parsnips can be used instead. Both will add a different but pleasant flavor profile.
- Onion: Adds a savory depth and slight sweetness when cooked. Shallots or green onions can be used as a substitute. They will provide a similar flavor with a slightly different intensity.
- Garlic: Enhances the overall flavor with its pungent and aromatic qualities. Garlic powder can be used if fresh garlic is not available. Alternatively, you can use shallots for a milder flavor.
- Egg: Acts as a binder to hold the fritters together. For a vegan option, you can use a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water) or a chia egg (same ratio as flax egg).
- All-Purpose Flour: Helps bind the ingredients and gives structure to the fritters. You can use chickpea flour, almond flour, or gluten-free flour blends if you need a gluten-free option.
- Coriander Powder: Adds a warm, citrusy flavor to the fritters. Cumin powder or a mix of ground spices like garam masala can be used for a different but complementary flavor.
Step-by-step: Carrots Zucchini Fritters
- Prepare the Vegetables: Grate the zucchini and carrots using a box grater or food processor. Place the grated vegetables in a large bowl. Sprinkle with a little salt and let sit for about 10 minutes. This helps draw out excess moisture. After 10 minutes, use a clean kitchen towel or cheesecloth to squeeze out as much liquid as possible from the zucchini and carrots.
- Mix the Ingredients: In a large mixing bowl, combine the grated zucchini, grated carrots, chopped onion, minced garlic, and fresh herbs. Add the egg, flour, coriander powder, salt, pepper, and grated parmesan cheese. Mix well until all ingredients are thoroughly combined.
- Form the Fritters: Heat a generous amount of olive oil in a large non-stick skillet over medium heat. Scoop about two tablespoons of the mixture and form it into a patty. Place it in the hot skillet. Repeat with the remaining mixture, making sure not to overcrowd the pan.
- Cook the Fritters: Fry the fritters for about 3-4 minutes on each side until golden brown and crispy. Once cooked, transfer the fritters to a plate lined with paper towels to drain any excess oil.
- Serve: Serve the fritters hot, with a side of yogurt or your favorite dipping sauce.

Notes
- Remove Excess Moisture: After grating the zucchini and carrots, sprinkle them with a little salt and let them sit for about 10 minutes. This helps draw out excess moisture. Squeeze the vegetables well using a clean kitchen towel or cheesecloth to prevent soggy fritters.
- Consistent Size: Try to make the fritters uniform in size. This ensures even cooking and helps them crisp up nicely. Using a cookie scoop or measuring spoon can help with consistency.
- Preheat the Oil: Make sure the oil is hot before adding the fritters. This helps them cook evenly and develop a crispy exterior. Test the oil by dropping a small amount of the mixture into the pan; it should sizzle immediately.
- Don’t Overcrowd the Pan: Fry the fritters in batches, leaving enough space between them. Overcrowding the pan can lower the oil temperature, resulting in greasy fritters.
- Adjust Seasoning: Taste the mixture before frying to adjust the seasoning if needed. You can fry a small test fritter to check the flavor and texture.
- Drain Excess Oil: After frying, place the fritters on a plate lined with paper towels to absorb any excess oil. This keeps them crispy and less greasy.
- Serve Immediately: Fritters are best enjoyed hot and fresh. If you need to keep them warm, place them in a single layer on a baking sheet in a low oven (around 200°F or 95°C) until ready to serve.
- Experiment with Add-ins: Feel free to add other ingredients like chopped herbs (parsley, dill), grated cheese, or spices (paprika, cumin) to customize the flavor to your liking.
